      Hi Marilou. I used half and half for the white sauce here but you can substitute with equal parts of milk and heavy whipping cream. The half and half thickens as it simmers and even more as it rests. If you prefer a creamier or thicker sauce, you can use heavy whipping cream instead.

      Hi Fatema. for oven-roasted chicken, I would recommend roasting at 425 degrees F for 1 hour 30 minutes (for a 5-5 1/2 lb chicken), or until juices run clear when you slice between the leg and thigh. A smaller chicken will roast faster. I highly recommend a meat thermometer since not all chickens are the same in size. The deepest/thickest part of the thigh should read 165หšF. Rest 15-20 minutes before serving after itโ€™s out of the oven.

      Hi Raven, you can try or use a pastry blender or pastry cutter. Blend in the butter until you see pea-sized crumbles then add 6-8 Tbsp of ice-cold water (put ice cubes in a cup with water and measure out the water from there). Fold with a spatula between each Tablespoon of water added. It works really well!

    I made it tonight! SOOOO good! I've seen comments that the rice was "mushy" but this type of recipe isn't supposed to be fluffy ice. Your video shows that it's supposed to have a moist, creamy texture. I loved the sweet taste of the onion. VERY good!
