    12:36 why do you add lecithin during the liquor grinding phase? I thought it is only needed when you are trying to keep sugar in suspension.

    There is a simpler Aztec way:
    1.- Get the fruit, extract the beans, clean them up and dry them under the sun (no fermentation needed)
    2.- Once the beans are complete dried, make a fire and use a large pan to toast them, remember to keep the beans rotating for they will burn if they are not moving around
    3.- Let them cool for 24 hours or so, then grind them to obtain powder
    4.- Add sugar and other ingredients, use a bit of water to moisture it enough so it becomes wet enough to make chunks, at this point you can store it
    5.- Try making hot chocolate by dissolving the final product into a bowl with little water, then add milk and cinnamon or vanilla, that's how it was made from the beginning. Once it boils, you can even see and taste the oil, it is absolutely delicious and pure. To top it up, you can use a molinillo, a traditional turned wood whisk which creates the froth in the drink.

    I want to set up my own homestead in Arizona, and I was figuring on growing mango, banana, vanilla, coffee, and cacao, all in greenhouses of course. I was even thinking that I would make very large greenhouses, up to 30 or more feet tall, to accommodate the trees at reasonable mature production sizes. So far, in my suburban home in the Phoenix area I've got a coffee tree, a vanilla vine, and a banana tree and all I'm really doing is proving to myself that I can avoid killing them. Lol
