Okay what is a true scientific problem with breaking spaghetti??
I usually cut it up when I eat it anyway or I will choke on it. So what is *the problem* ???

It's hilarious that they frame it like a food scientist would have a better grasp on food than a chef, especially an elite one. That's not how it works. That's like saying an engineer has a better grasp on erecting a wall than a mason. Food scientists don't make the best conventional food, they optimize products, highly produced, cost efficient wares.

but i guess after boiling the pasta in a cup of salt you really have to dilute them with a bland sauce -_-

  • Paper St.
    Paper St. 2 days ago

This...was fun. I haven't been able to cook for a YEAR, and I'm goin nuts. I've always done my meatballs and spaget with dried pasta (all the Italian stores I was taken to as a child, stocked endless varieties of dried pasta), plugs I love al dente, and fresh everything else. Good info on the oil...I was taught to Alaways add oil, estupido! News to me... Of course, brown your balls. Saute yr onions n garlic, rip yr spices, the nice tips were in balancing the sauce. I've always used Roma tomatoes for sauce; only the ripest. And simply cooked them down. Acidity caused me to resort to (the horror!) add sugar for some dishes. I live this video. Thank you!❤😍

Olive oil in cooking pasta is required for both taste and to keep the pasta from sticking together once cooked. I would never eat it without olive oil.

    1. never add oil to boiling pasta
    2. you don't have to crack spaghettis in half. They will slide into the pot in like in 30sec.
    3. adding salt before boiling will make so little effect + other things can effect the time it takes a pot of water to boil so...
    4. why they use pre-made tomato sauce? Can't they peel their own tomatoes?
I add grated potatoes instead of breadcrumbs. I thought everybody was doing it :D

The one thing that none of the chefs added which my grandmother (straight from Italy) used to do is to soak a piece of bread in milk and add that to the meat, eggs, bread crumbs, grated cheese and spices...and another thing she did was to shape them like eggs and fry them, and I always loved them...so good!! -Linda H.

Oh brother not one of these people know anything about Italian cooking. I do like the orange idea though. and not one person mentioned San Marzano tomatoes oh please give me a break . And their meat balls God that was dumb. I also have yet to taste a good meat ball in any restaurant. they have to put them in sauce to make them taste any good .But then you need a good sauce. and why make your own pasta when you have a lousy sauce / gravy a lousy meatball and a good pasta . I like that home made pasta though he hit that on the button. get that good pasta make it with Garlic oil and fresh parsley cooked up slightly browned in a pan Alia olia much better with those stupid sauce recipes.
