4 Levels of Spaghetti & Meatballs: Amateur to Food Scientist | Epicurious

  • Published on Nov 19, 2018
  • We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of spaghetti & meatballs. And then we brought in a food scientist to review their work. Which one was the best?

Idea: can you have 1 Italian, 1 Italian American and 1 American to cook an Italian recipe? (or what they think it's the Italian version of something)? Same could be done with Chinese (try Sweet and Sour pork) or Japanese (sushi?)

okay so if you're looking for arguably the best way to make spaghetti and meatballs, here it is:
use lorenzo's recipe here for everything, expect for the sauce. For the sauce, use Frank's recipe (trust me, that sauce is totally worth it)., but put the cheese rind in it as well and cook it in the fat like lorenzo does. don't bother with fresh pasta as you have to use it instantly unless its a special occasion, just use barilla (although, if there is some on sale or something and you *know* that you're going to eat pasta within 2-3 hours, get it because you won't regret it)
also, im italian, and let me tell you, it's fine if you break the pasta. i don't care, no one cares. i would actually recommend it if you have children or just don't feel like cutting a bunch of slippery pasta

Ok, that’s good and all, but “you put salt in water to increase the temperature of the water quicker”. That’s straight up false and it’s quite the opposite: salt should be added after the water is already boiling.
Unless my university chemistry teacher doesn’t know what she’s talking about.
Edit: Ok, thankfully the expert made it clear

Level 2: tries his best ----> italians still doesn't give a damn.
Level 3: tries everything he knows about general cooking rules ---> italians continue to not give a damn.
Reason is simple ---> it's NOT an italian recipe, please signal every book reporting it as such and the italian intelligence will cooperate with dedicated NBC teams to reach and dispose of the harmful books.
