  • We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of spaghetti & meatballs. And then we brought in a food scientist to review their work. Which one was the best?

    You add oil so you dont get clumps or pasta to stick to eat other but it is in small quantities

    Screw oil, hate the stuff. Unless i need a strong sear, i always use margarine over some slick oil. Stuff it Italian oil mafia, i reject your overpriced grease.
    Also, no. White sugar is fine if you use tomato paste. Gotta cook out the paste if you use it. I always add sugar to the paste and cook it out. Only reason to scoff at sugar is if you're some kind of health freak, idc i want it to taste good. I don't believe for a second that a single grated carrot can remove the tang from tomato paste.
    We don't have a culture of pasta meatballs where i'm from, but when i make it i tend to make smaller meatballs, though the process is similar to chef 2. I'd also keep some of the mince and use it when i make the sauce, else the sauce just isn't as good as it could be. Brown mince (season it well to bring out max flavor of it) add onions and caramelize slightly, then garlic and paste. Add sugar to paste and worchestershire sauce. Mix and cook for a short while. Then i add stock and water and let it cook and mix well. At the end i mix in canned tomatoes, pepper and oregano.
    Since i make my meatballs smaller, i add them near the end as not to overcook them. If i made them bigger i could add them earlier to have them add more flavor, but i prefer to have the leftover mince do the job.

    You can add just a tiny bit of baking soda to the canned sauce to take that acid canned taste out.

    You add a fat to the water to break the viscosity of the starch in the water as the pasta cooks so the pot won't boil over.
