The key to a soup with fully developed savory flavor starts with the soffritto-a mix of aromatic vegetables that are slowly cooked in the first stage of cooking. Take your time sweating down the vegetables until they are completely softened before letting them take on any color.       Historically Past e Fagioli ('pasta fazzole') was a poor family's dish. It was not made with meat, leeks or extra virgin olive oil (just olive oil)...all expensive items. It eventually became a supper dish for Fridays when Italian Catholics did not eat meat. That being said, Thank you for showing your mother's recipe. I loved the way you explained the process. Thank you again.

    I think a rough chop of celery, carrots , onions and garlic is much nicer. It more pleasing to the eye to see the vegetables not mush. I never add any meat. Your recipe sucks!

    My accountant is in Palm Springs. As a matter of fact going there today. After getting a beating (figuratively) I would head to Sonny Bono’s restaurant for pasta fasoule (sp?). Felt better afterwards.

    Carla said that you should use a Parmesan rind especially if you are vegetarian and not using the ham hock
    But Parmesan is a non vegetarian cheese. It contains animal rennet. There are vegetarian variations of Parmesan, but it cannot legally be called Parmesan unless it conforms to the traditional methods of creation, which require animal rennet

      +stormbob ? She clearly doesn't know, just as much as you. Traditional Italian hard cheeses use animal rennet usually calf rennet, hence why pesto isn't allowed for vegetarians because parmigiano reggiano is used to make it. Please, no need to get on your high horse about a topic you don't know about.

    FYI. If you're "not using a ham hock because you're vegetarian" you wouldn't be eating pecorino, grana Padano or Parmesan because non of them are vegetarian cheeses.

    I am an Italian American 2nd generation. I have eaten pasta fazool all my life and never have eaten or made it with carrots. No one in our family likes carrots...period. And guess what. It tastes just fine.

    Sofrito/soffritto is not an exclusively Italian word nor is it an exclusively Italian ingredient. In Spanish, it is spelled only with one t and one f. So please. Calm down about the amount of lack of letters ffs 🙄 I don't think anyone claimed that this is the most authentic pasta e fagioli recipe, in fact she begins the video by telling us that it's her mother's own recipe. She made it the way she wanted to make it and that's just something all of you sticklers and Italians are going to have to deal with. On that same note, yeah, it's a lot of garlic. You uh...don't have to use that much if you don't want to.

    I made this last week. I looked through several recipes but chose yours because I liked the philosophy behind your sofrito. I don't think I could have found a better recipe and won't bother looking because it was so delicious. Just wonderful and I didn't change a thing except for the cannelloni beans which my store didn't carry. Probably made a difference. I'm making it again today and hunting down those beans. Thanks for such a great recipe.

    this is touching my heart. i am not italian, nor my parents are, but my grandparents were. and i was cooked this exact soup when i was a child and even sometimes now as an adult by my parents. the fact that they learned how to cook it from their parents and then made it for me is just heartwarming. just yesterday i was thinking it was about time to learn how to make it myself.

    My recipe is from my Mom,so I’ve been making it for 45 years. Never heard of kale in pasta fagioli . But I have added spinach. I always start with carrots,celery,onion and garlic. Even in my “all day” sauce. Next to this on a winters day,Minestra!

    Triggered by the reasoning to not add the pasta to the soup to cook. Makes sense when you say it out loud but when you ask your dad to add the noodles to the amazing soup you have been simmering all day while you are at work and then you get home and it's now a dry pasta dish...all you have left is regret.
