when she called mason jar rings "sealers" and "lids" my southern heart freaked the fuck out, the rings are to help the lids seal, the lids seal it and the rings keep it sealed after the rings did their job, the rings are reusable but the seal on the lids are a one time thing

Flip the Mason jar rings over - so that they actually support the cupcake liners.
Also the point of using the ice cream scoop is that the blade that pushes things out of the scoop do a great job scraping the scoop so you don't make a mess. C'mon. Torture to watch the point get missed. 😞

You called frosting "icing" like 40 times but meh... Also could the marshmallow work if you baked it with the cupcake... Like putnit in the raw batter on top? Seems like that might keep it from falling off but I'm sure it would get quite toasted by the time the cupcake was done.

Why would you use a plastic bag when you can just use a piping bag and a nice rose or star tip.

If you don’t have a cupcake tin your can also just triple your cupcake liners and it holds them in place.

The apple piece in the cookie jar is a standard German Christmas Cookie Rescuer. The apple must be separated from the cookies by a sheet of sandwich paper and it should be a stored apple that’s not too moist ( just the kind of apples you get around Christmas here) and works best for cookies that are meant to be stored or meant to soften after baking like cinnamon stars (they sit for 24 hours before baking them for a very short time, then come out the oven ‚rock hard‘, then they catch any moisture they can get. (Maybe because there is no flour in them but almonds, hazelnuts and powdered sugar (modern recipes have up to 10% flour for baking convenience and to shorten sitting time as well as adding a little inbuilt softness.)
There are more German/central european cookie recipes without flour ( dating back to times of grain shortage in the winter, as many of them derived from historically poor regions like Schwaben)

For the softened butter hack...I use it when making icing or creaming sugars and I have to use 1/2 cup of sugar...Cut your stick of butter into chunks (I cut it into 4 pieces), boil water in the teapot, pour it in a microwave safe bowl leave sit 5-7 minutes, pour the water out, put in upside down over the butter leave for 5-7 minutes and you should be good to go

To freeze cookie dough I usually use a cookie scoop onto parchment paper and then freeze the pan tray for a 5-10 minutes before putting each of the balls of dough into a large container. As I freeze one tray, I’m scooping another and then rotating between scooping to freeze and taking it off the pan into a larger container.

I'd pass on the Jello/Kool aid hack. To flavour buttercream and give it colour I like to add frozen fruit juice concentrate. Usually a tablespoon or so to a cup of buttercream. Great flavours and colours. Don't know if you've ever tried it.

A smaller hack for the butter... it’s a little messier, but you can soften a stick of butter in a food processor.
Or just use the defrost setting on the microwave.

u should of taken the marshmellow out when it was still puffy and let it sit for 1 min. it deflates and retains more flavour.

  • KeyStroke
    KeyStroke 2 months ago

Also, re the Jell-O, it needs water in order to fully dissolve (it's not really fat-soluble) and color or flavor anything. Even a teaspoon would cause your buttercream to split, which isn't good, so I'd suggest perhaps using a stand or immersion mixer.

Doesn't everyone use an icing bag for icing? Eggshell removal with the egg shell gates back a century or more. Always works fine. Fill the wine bottle with cold water otherwise you get it too warm, plus you do it with the dough between two sheets of greaseproof paper.

  • Chris Matthews
    Chris Matthews 2 months ago

I don't normally bother with piping bags and use ziplocs almost exclusively (though I do use a piping tip with them, still.) Works fine, I always have them on hand, and I can stuff a bunch if I have multiple colors.

I used to break eggs on the counter instead of the side of the bowl 13:18. I had been told that one is less likely to get egg shells in the bowl that way. I really didn't notice a meaningful difference in that regard, I almost never get shell fragments either way, but I don't like egg whites on the counter top.

For the marshmallow hack you're supposed to do it at the same time as your cooking the cupcakes, so like 5 min before it's done you add the marshmallow. That keeps it from falling off
