What Is Salerno-Style Pizza? | Food Skills

  • For those craving the fresh ingredients of Naples, but aren't in the mood for Neapolitan pizza’s ultra-puffy crust, Salerno-style pies might be the ideal way to combine cheese, dough, and tomato sauce. Named after Salerno’s area code, and helmed by celebrated chef Roberto Paciullo, Zero Otto Nove is one of the few restaurants in NYC specializing in the southern Italian city’s unique approach to pizza-making. In this continuation of Food Skills’ deep-dive into NYC’s “real” Little Italy in the Bronx, chef Paciullo explains how his Salernitano pizza has become a surprise hit on the corner of Arthur Avenue and East 186th Street. Cooked extra crisp, and topped with Salerno-specific ingredients, like anchovies and capers, the pizza at Zero Otto Nove is both comfortingly familiar and exhilaratingly unique. Pairing ocean flavors with basil and olives, the restaurant’s signature Marinara pie is a must-try for thin-crust pizza lovers everywhere.

    I believe he said "everything you cook IN South Italy, there's anchovies". Not "everything you cook INSULTS Italy" haha. I'm sicilian it makes more sense, considering we eat a lot of anchovies. Especially on pizza

    Good points, proof dough at room temp for 1 day and fresh but drained mozzarella. IMO a little salty Pecorino cheese too, just for added taste.

    I had Pizza in Naples. Absolutely great. It's not as easy to eat by hand though which is very typical in the USA.

      +Eusie Short Then keep eating it. No one has the right to force you to eat what they think your should. It's your stomach and your body. What is really wrong with Pizza? Nothing unless you put something bad into it. Mass produced stuff sacrifices quality for profits.
      I can only advise you, based on my own experience, that nothing is going to beat the perfection you can achieve through making things yourself. When you make it yourself, you know exactly what is in it and you can tweak it the way you like. Home-made is always the bomb if you put the time in it. Whatever I eat becomes part of me, so I take care to ensure it is good and healthy. Don't get me wrong, I'm not some health nut. I just like good food! Don't you deserve the best? I think so.
      When my wife and I got back from places we visited, the first thing she did was try to make any new dishes we discovered while there. We make everything we can ourselves from scratch. We even grow vegetables in a small garden to get fresh produce. Our favorite dishes are Greek dishes, but the whole Mediterranean area has some outstanding food imho.

      I've heard Italian pasta is on a different level in Italy than the US. But I have to say, after eating at 1000 Degrees Neapolitan Pizza (started by an Italian-American less than a decade ago), I no longer touch Papa John's (YUCK!!!), Dominoes, Pizza Hut or any other Hate-yourself crap like Subway "pizza" or Little Ceaser's $5 shit-pie anymore! Even Olive Garden does it wrong- serving bread sticks with your pasta (not like I mind it), Italians Never do that and it's too fattening. I've also heard you'll never have pizza for lunch in Italy- that's only an American thing.... Damn it, bro! Pizza's my life!!

      +Eusie Short Pizza I had in Italy is not really anything like we eat in the US. Well, kinda, but still it is unique. I can only tell you my experience there.
      The crust is very thin and yes floppy. The edge crust is crisp though. Most people use a knife and fork (from what I saw). It's a pie! The closest you will come to it in the USA is NYC style but even thinner crust.
      Also the ingredients are much better. It's not just cheap pepperoni but instead can be all kinds of toppings, and the meat is high quality cured meat. You can immediately taste the difference. Even simple cured meat sandwich will blow your mind.
      They also don't focus on the perfect circle shape or the perfectly spread toppings. It's just thrown on there in globs. Everywhere I went it was cooked in a stone/brick oven.
      I have traveled a bit and I am 100% confident that what we are eating in the USA is not the best food and in some cases is probably fake, or has been so modified that it has lost a lot of natural flavor. I had a glass of juice in Spain one time that immediately made me question WTF we are drinking the USA. Everything tastes more "real" in other countries. To this day I will not eat anything that is not prepared at home by hand.

    I'm Greek, but I know that anchovies are like nature's MSG to Italians. They sometimes use it instead of salt, you can't even taste it but it makes a world of difference. Delicious stuff, much love and respect to our neighbors!

    I actually stayed in Salerno during a trip to Italy with my family. Didn't visit anything in town, just used it as a place to stay while we visited Pompeii, Paestum, and Amalfi. We DID however go to a really nice Pizza place though and it was one of the best pizzas I had ever had. We actually got 3 Pizzas, 2 Margarita and one other one... the name escapes me however.

    It's over-rated and too chewy. I like my crust to sit 15-20 minutes to let it rest because this way it loses that chewiness. It also rises and becomes lighter. If I want it crispy I prebake it.

    I'm from Salerno and this is absolutely correct. The Salerno style is a lil bit more crispier than the Napoli style.
    Anyway only seeing it, it's a really well made pizza. Trust this man!!!

    One of the most singularly important quotes was left out of the captions of the video, unfortunately; it's a sentence that sums up precisely the inspiration, appeal, and reasons for continuing success of this and other types of old-school and reliably delicious foods: "Just peasant food, simple." at 3:44. This is a common refrain among immigrants, in my experience, that is rooted in humility, and is something to remember. Real food is passionate and authentic.

    Btw, it should be "PIZZA SALERNITANA" not salernitano pizza. Pizza is female (every noun that ends in -A is female) and the adjective comes after the noun in Italian in this case.

    Looks nice and I'm glad I watched. But the answer to the title question is "they leave the pizza in the oven a few seconds longer than in Naples". That's it. When I make Neopolitan-style pizza at home sometimes I leave it in the oven an extra minute, intentionally or unintentionally, and it comes out with a crunchy exterior on the crust.
