Binging with Babish: Tampopo Ramen

  • Tampopo is a genre-bender ahead of its time, affectionately referred to as a "ramen western". Like spaghetti western. But Japanese. Hence the ramen. It's a play on words, you don't get it. This 1985 foodie flight of fancy features a 'ramen master', who artfully studies and mindfully consumes his bowl of steaming noodles and broth. NOTE: I forgot to mention in the video, this came out absolutely fan-fucking-tastic. The noodles were tender but chewy, the broth was flavorful without being too fishy, and the pork was exquisite.

    In some countries, slurping the noodles is a bad manner when eating but some(not sure if japan is included) it is sign that food was really good and a way to show the chef that you are enjoying the food.

    You pronounced everything in this video pretty good. Although, in a couple of your other Ramen videos you still mispronounce Tonkotsu. You keep saying Tonkatsu, fried Pork Cutlet. Drives me nuts!!! Tonkotsu - (tone-koh-tsoo).

    The film follows the classic Western theme: loner (in truck decorated with cow horns) helps a widow save her ranch. then rides off into the sunset. This is where I learned it is an insult to the ramen chef if you don't drink the soup after eating the solids.

    This comment is SO gonna get lost in all of this but: This is not Shoyu Ramen.
    It's Pork/chicken/shoyu weird ramen.
    Traditional Shoyu Ramen is made with chicken and vegetable stock and shoyu more or less to taste, but Japanese people say it should taste more like herbs than soy sauce. So, a moderate amount.

    Traditional or standard ramen like the one you see in anime, is made purely from pork stock: they cook it until it looks cloudy, has a more opaque color and the consistency is creamy. Although in some regions they do add some chicken, any Japanese person from any prefecture will tell you that the standard and mostly used recipe is to make a pork only broth.

    In Japan we commonly use pork belly for char siew. The fats are a nice complement to the saltiness. Don't waste your budget on the shoulders

    Well, you lost me on the noodles when you said Vital Wheat Gluten. Definitely Not Celiac friendly. Guess I'll have to experiment with other noodle recipes. Otherwise sounds really awesome.

    Dont listen to the garbage about slurping being respectful.
    Slurping is the most efficient way to quickly cool the hot broth/food, which is the only reason why Japanese do it

      Yeah but don't be too loud cause that's disrespectful. Some people DONT wanna hear slurping sounds when they eat, so make sure that you're not over doing it. It's good for the chef, bad for the people

    For asian recipes check out Mike Chen's 2.0 chinese hot oil, think he's getting ready to market it.
    Also the slurping is partly because you're supposed to get the broth with the noodles in one go by lifting your desired amount of noodles up, dipping back down into broth and then slurping up in one go getting a mouthful of noodles and broth. The slurping is also kind of a necessity since it's usually eaten quickly by businessmen on the go and served boiling hot, so slurping is needed to kind of cool it a smidge.
    If you want some good ramen recipes check out Ivan Orkin's cookbook. Not only is his ramen award winning, praised by some of my own personal favourite japanese celebrities like Matsumoto Hitsoshi but he's also extremely meticulous with the measurements of his recipes so i've had some personal great success with creating some delicious ramen by using his tare, chashu pork, garlic oil and other recipes.
