    As a US Midwesterner I always felt like Sushi was a metrosexual trendy type fashion. It looked weird to my midwestern self, Kinda of like an alien deviled egg. Then because of reasons I won't go into here I tried it and it has become a new voyage. This guy in the video seems over the top with his descriptions but I don't think it is overly eggarated. I am glad I waited this long in life to try this because it is a new adventure for me.

    One of the most exciting and upcoming young sushi chefs in Tokyo (Ginza) today is not actually Japanese. He's young (25yrs) and he sure looks Japanese, he sounds Japanese - he stands about 6'5" - the friendly, gentle giant. No Michelin star yet - but on his way... As the youngest and only gaijin ever entered (you must be invited or 'recommended' to enter) he was recently awarded first in presentation in one class and speed in another class - over and above all the other 47 older and very experienced Japanese entrants invited from across Japan.

    They make truly amazing sushi, not just the taste but you can have a real good one with decent price. Once i tried eel sushi in Japan and i was literally shocked, i would never forget that taste and it was not expensive at all!

    Your Chinese translation is wrong.
    First piece of sushi(yellow tail) is 「平政」in Chinese.
    yellowtail=平政=seriola lalandi
    Japanese amberjack=青甘=seriola quinqueradiata
    They really look very similar.....

      Hey, I am talking about ”Chinese translation subtitle” and I am not from China.
      They are not just culinary term.They are totally different fish with different taste and price.Only wild japanese amberjack with large size is called “Buri”.(I am not sure the first piece of sushi in this video is Buri or not.Usually the sushi chef doesn’t serve it as first piece.Thus I think it’s yellowtail.)
      I am not trying to criticize this video but correct it and I am talking about it’s”Chinese translation subtitle”.It’s a big misunderstanding of these two fish.

      Hey, this is Japan, not China. I agree that the translation may be misleading but Buri literary translates to yellowtail in Japanese but it's really Japanese amberjack. It's the culinary term for it so get over it. Just like how Chilean seabass is really Patagonian toothfish.

      Unless you got a friend who is a regular customer at his restaurant or unless you can get a good concierge in Tokyo to try and arrange something (for a not so negligible fee, of course), I am afraid that the chances are very slim. It is becoming increasingly difficult as time passes. And videos like this do not reduce Saito's popularity.
      A friend had great luck and got himself a seat for dinner some months ago through a Japanese friend of his. Needless to say, it was the best sushi experience he has ever had.

     そんな寿司をテーブルに載せて、平気な顔しているウエイトレスに、寿司職人とも呼べないわけの分からない人や、店がある。誰が見ても、汚物だ、ってな寿司だよ。どんな了見だったんだろう。そして、あるんだ、いるんだよ。そんな悪さをする奴がさ。貧困や不正は何処の国にもある、っていうけどさ。どこにもいる。店ぐるみでやるところもある。実際そうだものなあ。会計レジのおばさんも分かってやっていたんだ。魔がさすようにさ。まあ、しょっちゅうやっていたら店はつぶれているはずだ。
     そして、今も隙をうかがっているはずだ。こんなふうにさ。次の犠牲者を探してさ。
     「へっへへへ!!! イッヒヒヒ!!」
     ちなみに、下高井戸の寿司屋は止めたほうがいいみたい。銀行がまん前にあったら止めたほうがいい。まあ、わさびが利きすぎる店もあぶないなあ、っとはいわれているけど、下高井戸の店は見るからに汚物だった。そして、今考えると計画的な犯行だった。だって、その汚物寿司を食べているかどうか、そ~、っとウエイトレスが様子を見に来ていたんだ。そして、それを誤魔化すためにこんな事を私にいったよ。
     「味噌汁もついているんですよ。」
     いやあ~、根性の悪いこと、悪いこと。もちろん、味噌汁も、味噌汁を載せる盆も手には持っていなかったよ。

    Greetings from Vancouver Canada Simon and Martina! My wife and I are going to Japan in 1 month. We tried to make a reservation here and was told that Sushi Saito is no longer open to public? We also tried to get a seat at Sukiyabashi Jiro, and of course they are also fully booked. We watched your other video at Sushisho Masa, I think we are going to try and get a seat there. Any other nice sushi restaurants you guys would recommend in Tokyo? A 3 Michelin starred restaurant would be awesome! We are also going to Kyoto, anything good to eat you would recommend? Thanks!

      This is Japan! They take cleanliness and hygiene very seriously. To think that the chef of one of the best restaurants in the country wouldn't wash his hands before the service borders on irrationality. And as you can see in the video, he cleanses his fingers in water after every single piece he makes. Therefore, there is nothing to fear.

    Liked watching the chef, not so much the people eating. Their reaction was predictable sitting right there in front of the chef. The whole, every bite needs and orgasm face thing gets old REAL quick. Show the food prep, the skill of the chef....not rolling eyes and chewing with stuffed mouths. Who enjoys watching people stuffing their faces? Not me.

      What market strategy tries to promote a restaurant which seats just 7 persons and whose list of reservations is pretty much written by regular customers?
      You cannot just call up the restaurant and ask for a lunch reservation. If you are lucky, a frequent customer who is known to Saito or his staff could recommend you as a guest and vouch for you. Only then can you hope to get a reservation at the restaurant. Otherwise, you would need to find a good concierge in Tokyo who might be able to get you a seat at Saito for a not so trivial fee, and even then there is absolutely no guarantee that you are going to get it. And even though Saito is considered quite relaxed and communicative, if you act inappropriately, you will not only ridicule yourself, but also discredit the person who vouched for you. You really don't want to do that to that person.
      There is no website to the restaurant. The public telephone number is not primarily intended for reservations and trying to call and ask for a seat will get you a polite refusal.
      In short, Saito doesn't need marketing. His restaurant is possibly the best sushi restaurant in Tokyo, perhaps even in all of Japan. It is simply not meant for everyone. The ones who can really appreciate such quality cuisine will find their way in there eventually. Others can dream.

    Loved the video, BUT WHY WAS SHE EATING THE SUSHI WITH CHOPSTICKS!!! Also, I was wondering if he put wasabi on the sushi. For me, wasabi is an automatic deal breaker. Steals the experience of great raw fish and sushi as a whole.

      Great question! 😊 All high-end sushi restaurants in Japan layout both chopsticks and tiny finger towels so that the customer can decide how they want to eat it. It isn't a rule in Japan to eat sushi with only hands or only chopsticks It's not like I packed my own personal chopsticks in my purse and pulled them out...😂 Also, some pieces are best handled with your fingers, while other pieces are too delicate for fingers and chopsticks work best at lifting it into your mouth. When it comes to wasabi, the chef pairs the fish with the amount of wasabi he believes works to compliment the fish. For example, we had a super oily deep-sea fish, and he explained that he was adding a lot of wasabi to counteract the oil. When we ate it, I didn't taste wasabi at all. Wasabi isn't mindlessly slapped onto every single piece, the same goes with soy sauce or whatever tare they are using. It is used to compliment the fish. Hope this helped! :)

    I love sensei's last words, wherein he can see the emotions of everyone involved with the food. Time moves so fast right now, and we often dismiss eating/cooking as a very trivial thing; however, whenever we cook for people we love, or for people who come to our stores for unusual cooking experiences, that is when we feel these types of emotions. Many people retreat to good food, uplifting our spirits and tell us that we can do another day :)

    what annoys me about sushi is its always slighty too big to be bite sized, and slightly too small to be anything but bite sized. its a really uncomfortable amount of food to have to eat in a single bite, but you look like a retard biting it in half

    So this pretty much Saito has some godly secrets to prepare Sushi. So one of his apprentices will inherit his secret. One must be the prodige from a wealthy family who wants the secret to increase his fame and ego. The other one is a guy whos father was a good friend of Saito who disappeared 10 years ago. This guy has a lot of raw talent and his dream is become the best Sushi chef in the world is naive and hard worker who loves Sushi. 1 more season to introduce a love interest a tournament chef, The Mcdonalds Invasion Saga.and World tournament where we find out Second guy father is alive and has his own restaurant and will be the final boss..This anime rocks

      For the full Omakase menu, you would pay about 220-240 dollars, depending on what fish he is presenting you (not all the fish you see here are available at all times). Also in most cases, he doesn't just serve Nigiri, but also soups and other specialties.
      A friend actually got the opportunity of experiencing his Omakase menu in May and he paid 30.000 yen for it (roughly 270 dollars back then), but Nigiri were only a small part of his experience.

      No close but wrong, go to the internet and it says 25000 yen (226 USD) for dinner omakase (6-7 appetizers and 14 pieces of sushi + a roll, soup, and egg), and lunch omakase (no appetizers, 15 pieces of sushi + a roll and egg) is 15000 yen (135 USD). Dinner omakase can also be served during lunch upon request via reservation if you manage to book a seat.

      The price for the full Omakase menu with drinks is about 30.000 yen.
      There is no website for the restaurant. Given that it seats only 7 people, reservations are required months in advance and can pretty much only be done by a regular customer of the restaurant. Even if you could contact the restaurant by phone, they would simply turn you down with no hesitation if you are unknown to them. Sometimes a good concierge in Tokyo can help you with that for a price, but in general, one has to be well connected to even hope for a seat at Saito's table.
