Fish | Basics with Babish

  • On this episode of Basics, we're taking a look at a few ways to simply prepare fish. Whether you're baking or frying, it's an economically and ecologically responsible way to make dinner tonight.
    Grocery List:
    Salmon fillets
    Panko bread crumbs
    Thyme, chopped
    Rosemary, minced
    White fish (high quality like cod or haddock)
    Russet potatoes
    Peanut or vegetable oil
    Kosher salt
    Ground black pepper
    Grain mustard
    All purpose flour
    Baking powder
    Mexican beer (or beer of your choice)
    Tartar sauce (optional)
    Special equipment:
    Stainless steel pot, deep enough for frying
    Thermometer for frying oil

    Hey Bab. Line cook for 6 years now. If you lay the fish the opposite way the fish wont curl up like that. You want to lie the fish rib side down if that makes any sense. Just a tip i thought I should share. Love your videos dude

    Waiving the fish back and forth is a terrible technique I will never understand. I've been cooking beer battered fish professionally for a few years and all the better pieces were held still while being dropped.

    Saying "panko bread crumbs" is redundant, kinda like saying "naan bread." You already got a lot of good info from the person who works in the chippy down below, so the only other thing I gotta say is your fish looks great.

    Grill steamed teriyaki salmon. I marinade the salmon in Yoshidas teriyaki sauce for about an hour place the dried filet skin side down in the center of a piece aluminum foil. Spread a large pad of creme cheese on top of the filet put a handful of sliced mushrooms on top with a couple pieces of peeled garlic dust with onion powder and add some fresh herbs ( whatever i happen to have in my garden.) Seal the aluminum foil in a tent around the salmon and place on a heated grill on the hot side for a couple minutes and move to the cold side for the remainder of your cooking time. Total cooking time should be about 10 min per in of thickness.
    Delish. This recipe also works with trout and cat fish with only minor changes to the preparation.

    Andrew, did you just say fish was "Economical"?
    In what sense is fish economical? At my local grocery store, frozen Tilapia and Cod are like between $9-$11 a pound. Compare that to chicken and pork, which is like $2-$3 a pound and beef which is $5-$7 a pound unless you're getting steaks.
    And that's for Frozen Tilapia and Cod. Fresh fish is even more expensive.

      Actually I do. Fish is not really "Economical" unless you're comparing it to like premium cuts of beef or something obscure, like lamb. I just checked my local sale paper and they have Tuna and Salmon on sale for 11.00 a lb for the 4th of July Holiday, normally 13.00 a lb. Frozen whitefish is 10.00 a lb. For that money, I could get like 5-10 lbs of chicken or probably like 3lbs of pork or even 2 lbs of cheap beef like chuck roast.
      Fish is tasty, but it is not economical. Not compared to chicken and pork.
