  • On this episode of Basics, we're taking a look at a few ways to simply prepare fish. Whether you're baking or frying, it's an economically and ecologically responsible way to make dinner tonight.
    Grocery List:
    Salmon fillets
    Panko bread crumbs
    Thyme, chopped
    Rosemary, minced
    White fish (high quality like cod or haddock)
    Russet potatoes
    Peanut or vegetable oil
    Kosher salt
    Ground black pepper
    Grain mustard
    Mayo
    All purpose flour
    Cornstarch
    Paprika
    Baking powder
    Mexican beer (or beer of your choice)
    Tartar sauce (optional)
    Special equipment:
    Stainless steel pot, deep enough for frying
    Thermometer for frying oil

    North America!!! Please start draining your deep fried stuff by putting into a hot mesh/strainer thing and leaving it sit above the hot oil for a minute before you put it onto your paper towels!!! It works sooooooo much better to make less greasy crispy stuff. Tell everyone!!!

    for white fish, the main ones are Cod, Haddock, Pollock, and Tilapia. I'd say do your best to avoid Tilapia as it's really not good for you and is only marginally cheaper than the other three.

    How do I bleach my chips though? I mean like how do I fry my chips if I don't want them to look all brown and burnt? but I still want to get a crunchy outside texture and the nice airy inside you get in fish and chip shops. The burnt look puts me off. Would appreciate if someone would give me some advice.

    Omg. Ik this is an old video. But I just made that salmon, substituted honey dijon mustard because I couldn't find the grain mustard, and its sooo good!!

    This looks great! Although, as an official card-carrying Brit I'd say those chips are still way too thin, they look far more like French Fries than the Chip Shop chips we're used to.

    You should come over to the UK at some point and treat yourself to a nice fish n'chips from the local "chippie"; also, you can't go wrong with curry sauce (yes, curry sauce is quite common with chips around here!), although Gravy certainly works wonders as well.

    Just tried out the salmon recipe with a few alterations because i like to experiment. Omg you gotta try this. I used a full salmon fillet, same baking instructions but change the time to around 28 minutes of you salmon is thick and large like mine was. Before putting the mayo on put a healthy amount in a bowl mix in a healthy amount of fresh ground black pepper or to your tasting, about a table spoon of chili powder, maybe half a table spoon of ground pink himalayan salt or whatever you have lying around. Some oregano leaves one small lime, dice up about half a red onion not too fine but small, one green jalapeno, mix it all up very well then spread onto the salmon and instead of bread crumbs i used some corn bread mix ( jiffy because its a very dry cornbread ) it came out great. The corn bread adds a nice sweetness to along with the onions that baked in the mayo, with the perfect amount of a light spice from the jalapenos ( take seeds out of the jalapenos ) and the skin was nice and crispy brown.

    Hey Andy, I love my mum but whenever she buys fish she has this uncanny ability to always buy the absolute worst cut in the whole fishmongers. She just brought home a tiny salmon fillet that is mostly skin, was full of bones and upon removing them lost all structural integrity and now looks shaggy and nasty. Is there ANYTHING i can do to make it edible??

    Mate, the British empire literally invented the 'imperial' measures (inches, miles etc.) and we still use them more often than the French designed metric system. So please do not switch to the metric system on our account. I can assure you the Queen would not approve of your English.
