    Sodium NITRITE or Curing Salt causes cancer. Leave it out and your beef will taste exactly the same but will look grey instead of artificially pink.

    little scallop fillets into the fat to the meat works great and leaves the mass of the fat mostly intact... and don't put a plate on it, use a stainless oven rack or something else that DOESN'T seal a large portion of the surface of the meat. Like a couple forks with a plate on top of them.

    While I was visiting Halifax Canada they served this up in the kitchen and called it a boiled dinner. Probably right up there as the most disgusting thing I've ever eaten in my life. Your corn beef looks fantastic! Theirs looked nothing like yours.
