Ice Cream | Basics with Babish

  • This week on Basics, things take a turn for the sweeter because I'm making ice cream. We're going to try a few different techniques that vary in difficulty, but they all have one thing in common: you don't need a standalone appliance.

    Ingredients & Grocery List:
    + Blended Banana Ice Cream:
    2 bananas, frozen
    Whole milk
    2 Tbsp cocoa powder (or more to taste)
    + Sweetened Condensed Shortcut:
    1 pint of heavy whipping cream
    1 can sweetened condensed milk (14 ounces)
    4 Tbsp melted butter (optional)
    2 heaping Tbsp cocoa powder (or more to taste)
    + Standard Ice Cream (Hand Churned):
    2 cups whole milk
    2 whole eggs
    1 cup white sugar
    1/3 cup cocoa powder
    1 1/2 cups heavy cream
    Medium bag of ice
    1/2 cup Kosher salt
    Special Equipment:
    Blender
    Stand mixer (with whisk)
    Whisk
    Instant read thermometer
    Metal mixing bowls, various sizes

    3:48 Salt makes ice colder than ice would get without salt.
    We did this thing in school that was so stupid, we put some salt on our forearm and pressed an ice cube onto it.
    Don't try it, it will burn your skin and leave scars..

    I see a lot of people from english speaking countries imply that there is some discernible difference between ice cream and gielato. Gielato is just the translation and I have no idea where people get the idea that they are, in some way, different.

    willl not lie using liquid nitrogen made the best icecream i have ever had and you can do it in the kitchen-aid mixer. after mix is made no joke like 30 sec to make a bowls worth

      You could buy a regular ice cream machine for smaller crystals in your ice cream. We have one and it makes perfect ice cream or sherbet every time

    Hey Andrew - little off topic here - could you maybe make a basics video on cooking with non-stick items? I'm trying to shed my teflon dependency and I'm finding that no amount of oil or agitating stops my dishes from absolutely welding to my pan

      Just poor some liquid in the pan while the pan is still hot and all the food stuck to the bottom will release from the pan. It's called deglazing. Look it up.

      Well I don’t really know but probably unless it’s like actual fruit not powder but other than that I don’t think sugar has some magic property’s that make it amazing with ice cream

      I used a loaf tin instead. Lot less shallower and it slotted right in next to me peas.

    Can someone help meeee? I made the third method but instead of heavy cream I used whipping cream. There is about a 6% fat difference between them, whipping having less. I'm on the 4th interval of chilling and mixing and the mixture is still very liquidy. Did the wrong type of cream cause this? Is the temperature not cold enough? Idk please help😣😣😣😓
