    I now keep a bowl of this in the fridge for my days off as I work an overnight shift, and lunch time is 2 AM. Will experiment with Amish Baby Swiss next time, as it tastes better to me with a higher fat content. Its cheaper too. Between Jacques and a paperback book by Fernande Garvin called The Art of French Cooking, I became a pretty good cook decades ago. Even taping his and Julia's episodes on VHS in the mid 90's!
    Hats off to you Jacques. Keep making new stuff. You're not allowed to die.
