    You cut the fat off!? Highly disagree! But I am going to try the recipe... although I do a version on the steak and then finish in the cast iron with the butter, garlic, and herbs.

    Frequent Turning Method?
    Which chefs adopt this method? None
    I'm sure it's delicious, but what you want is reverse sear. Look it up.
    No chef ever chooses constant turning as the best method

    Really regretted coming to the comments today. Never heard the phrase of salad tossing in a derogatory fashion before.     Carla after the steak is done. Put half of butter and chopped cabbage. The cabbage will absorb the flavor of the steak and butter .

    Don't use extra virgin olive oil to sear steak. It has a low smoke point i.e. not suitable for high temp cooking

    She seems dangerous in a kitchen judging by she handles that tiny knife when cutting the meat. Also, wait until the pan is sufficiently hot before putting your steak on it. It should be a loud simmer
