    It doesnt seems nice to eat. It is mostly oil yogurt and rice. I guess the flavor come from the saffron.

    I made this last night and it was delicious!!! Crunchy, creamy, tangy, salty. The texture contrast between the crunchy outside and the soft inside rice is delicious. The berries contrast deliciously with the rice. I didn't have barberries, so I used tart dried cherries. I even ate it again for breakfast! So good, Thanks Andy!

    I am pretty proud of seeing tahchin being made in the test kitchen. But I'm actually really interested on seeing what the crew would think of other Persian cuisines specifically the stews like ghormesabzi and gheyme and so on... Or other complicated rice dishes like Shirin Polo and stuff like that.

      It's out from the oven, totally forgot to oil the dish so the rice didn't brown and crust well :(
      BUT IT IS AMAZING!!!! It's everything I'd imagine it being and more thank you!!!!

    Can someone explain to me why he needed yolks to color the rice when he was already using a buttload of saffron? That amount of saffron, by itself, would, I believe, impart a STRONG color to most (all?) dishes as it is. Because of the strong color and flavor (and because I'm a broke-a** MF and it's expensive), I've never personally used THAT much saffron in any single dish (I've cooked dishes that fed 4+ with leftovers, so I'm not talking about one-person-serving amounts), but the dishes I've made with it (if it's relevant: Mexican/yellow rice, "Latin" inspired meat dishes, and once I used it in an off-the-cuff made with what was on-hand 'tortilla soup') definitely didn't need any extra coloring help. They turned out a pretty goldenrod-yellow kind of color without any other "color inducing" ingredients.
    Genuine question here: Am I ignorant of something relevant, or is he being redundant?
    IMPORTANT NOTE: I swear I'm *not* trying to be catty/b*tchy or act like a know-it-all (I know from previous experience that I sometimes come off that way in text because I have a bad way of phrasing things, but that's 100% unintentional, I mean ZERO offense). I definitely don't, I'm just honestly confused about the need to add extra color-specific ingredients, considering my personal experience with saffron and its ability to color dishes.
    If I'm mistaken, I'm OVERJOYED to be corrected. I'm here to learn. :)

    Every time I come here, I Laugh so hard at Brad.
