    You never have to flip an omelet, you can use a lid cover to steam cook the top, and both sides come out yellow with no scorching.

    chef, i appreciate your effort. let me start with the fact that back in the early nineties, i was the sous chef at paradis barcelona in manhattan. this was a spanish company bent on introducing the tapas concept to new york. the frittata was and is a cold spanish tapa. i will say no more other than pick up a copy of "catalan cuisine" and off to the races. no bullocks here. have at it. btw we made the best paella in town. flamenco every weekend. i believe they went south. keep rolling.
