Important question: How do you keep the pots you cook sugar in from getting all crusty? Is it just a constant rotation of heating sugar in it so you don't even need to wash it? Or do you just soak it in something to get all the sugar to crust off? Thanks.

who is the dummy touching the candy with out a heat glove hahaha Also why don't they shove the stick in while it's in the actual form so it doesn't mishape it as much

Clearly you have a lot of experience in candy making with your insults. The candy is about 120 at that point in the process. Gloves are not needed once you build heat tolerance If it were hotter than that igneous go flat under its own weight. It will actually distort more of you push it in when it's in the form.

I wonder... Does any candy actually use one of the mistakes you mention as part of the recipe? Like a sticky candy that has water left over from the dye or maybe a specific taste from adding citric acid to a candy too early?
I’d imagine there’s a reason I haven’t seen anything like that, but I’m still curious.

If you keep pulling the candy on the hook, like past the white point does it because very airy?

    • Lofty Pursuits
      Lofty Pursuits  Year ago

+Jack D yes you can. 2 things happen. The cabdy gets large air bubbles in it, and the candy cools off too much.

  • SuperHappyNotMerry

That's such a gorgeous pearly white. It almost looks like ribbons when you're stretching it on the hook. Beautiful

    • boo yah
      boo yah 3 months ago

In most videos, he mentions that they sell the end pieces as "unicorn droppings" but only in-person at their store (you can buy most of their candy at their online store, but _not_ unicorn droppings). It's also been mentioned that people will use the unicorn droppings in cooking projects; I'm not sure how that works, but I thought it was an interesting use of the end pieces.
p.s. Since you mentioned you're not good at spelling, here's a corrected version of your original post, "You know the top of it, where you cut it off, it can be a giant sucker not a lolly pop. It might be cool or just dumb. Sorry, I am not good at spelling." A couple of your mistakes were actually kinda humorous, specifically a "mite" is a type of bug, as is a "bee", but the pronunciation of each is consistent with the words you clearly meant, "might" and "be", respectively.

So when you cut the red from the (at the time) clear, you missed a bit. But you didn't go back to get it out, and just left it in. Why didn't you take the bit of red out? Would it not have discolored the white some?

    • Lofty Pursuits

+allieandfluff it was too little, it won't effect the white enough to tell.

I've noticed that watching these make me not want to rub my face while I see them handling the candy, as though I subconsciously begin to feel a little bit like I'm handling it, lol. I have this tiny moment of hesitation before I rub an eye or something because I'm worried I'll contaminate the food...though I'm not near any food!
