Brad Makes Beef Jerky | It's Alive | Bon Appétit

  • Bon Appétit Test Kitchen Manager Brad Leone is back for episode 38 of “It’s Alive” and this time he's making beef jerky. Join Brad as he walks you through cutting, seasoning, and dehydrating two flavors of jerky.

    The Old Timer:
    1¼ lb. eye of round beef
    3 Tbsp. pure maple syrup
    ¼ cup Worcestershire sauce
    1 tsp. garlic powder
    1 tsp. onion powder
    1 tsp. kosher salt
    1 Tbsp. drained capers
    1 Tbsp. caper liquid
    1 tsp. chili powder
    ¼ tsp. cayenne pepper
    ½ tsp. dried oregano
    1½ tsp. Tellicherry pepper

    Bringin’ the Funk:
    1¼ lb. beef
    10 dashes fish sauce
    2 Tbsp. honey
    3 Tbsp. soy sauce
    3 garlic cloves
    1 Fresno chile
    1 1" piece ginger
    ¼ cup gochujang
    ¼ tsp. Chinese five-spice powder
    Sesame seeds (for topping)

    Paper bags is the best way to store it I make it at home dry it out In the sun then I use a cold smoker for 12-16 hours and put it in paper bags have had bags laying around for up to 8 months and tastes the same as the same it was made

    Did u know that technically seeking you don't want to heat your meat when you make jerry you want to keep it below room temp but above freezing because your curing the meat

    Apologies if someone has mentioned this before but there's over 5000 comments!
    Brad, I would recommend trying out some air dried biltong if you haven't done so, it will take you right back to the Veld.
    Also some bitkafisk (air died Icelandic fish). If you haven't tasted it I recommend going straight to the source; you can munch it whilst straddling the tectonic plates, and wash it down with some Black Death!

    Have you tried "biltong"? It's a South African version of jerky. Mostly the same recipe but thick cuts (like steak cuts). We then hang them out to dry for about a week (in the cool / bugless seasons), which ages it and allows you to take it off "medium dry". You can then slice it fine or chunky for a chewing match :)

    Roast a half cup of cashew nuts in a hot dry pan. When they are about done (nicely browned), throw in a cup of the more fatty jerky pieces. And maybe toss in some chili flakes if you like more spice. Roast in the hot pan for maybe a minute more. Toss in a small bowl. Eat.

      I would put it in a couple hours longer but it should work. check it after about 5 1/2 hours
