    Chipotle adobo makes for a great jerky. You can just use a can of chipotles in adobo, add a bay leaf, oregano, some dry onion. Another angle is the Dutch-Indes vis a vis cardamon, parsley a la Swedish meatballs is a good twist on the classic.
    Not the same but similar; Chicken jerky is actually slices frozen breast, breaded and fried in thin, pounded out strips in a buffalo style. They get perfectly crispy, slighty chewy while still being moist enough to eat. A great and more manageable spin that honestly gives a mouth-feel like chicken jerky even if it's totally not.

    Our dehydrator is one my dad made like 20 years ago from plans from the Oregon ag office and when he was trying to make jerky for backpacking drying it took like 10 hours

    I used to make an Asian inspired jerky, some seasoned rice vinegar, some teriyaki sauce, and chinese five spice. It was so good. Makes me want to make some again.
    Edit: my granpa made a really good venison jerky. He used tomato as his base, with mustard seed, basil, and honey. Before marinating, he would put the meat in a bag with minced onions so it would soften, then he'd use the onions to make soup. He'd slice the meat about 1/4 inch thick and then pound it to soften it more, rubbing it down with this homemade tomato puree mixed with honey and salt, coarse ground mustard, and minced basil. That jerky was so amazing. It had good chew, but it would just melt away in your mouth. :)

    Brad, I'm not even vegan, but you can make AWESOME vegan jerky out of dehydrated kombucha scobies. Add your fav jerky spice, and seriously a great vegan alternative.
    Jerky is still is delicious, but you need a veg option every so often !

    My Secret ingredient is marijuana. Just throw a whole quarter into literally anything and I dunno heat it up a little bit I guess then eat it before work see what happens. See if you get an osha violation and if u do then u NO it’s good. When in doubt.. put a quarter of pot in it
