3-Ingredient Coconut Cookies Recipe

  • Super easy Coconut cookies recipe. Only 3 ingredients required and few minutes of work. There cookies are flourless (gluten free) and dairy free. They are crispy on the outside and soft on the inside.

    My favorite kitchen equipment:
    Makes about 16-18 cookies
    2 Eggs whites
    2 cups (180g) Desiccated coconut
    1/2 cup (100g) Sugar
    Pinch salt
    1. Preheat oven to 340F (170C).
    2. Whisk egg whites with pinch of salt, when foamy, gradually add sugar and whisk on high speed until stiff peak form.
    3. Fold in desiccated coconut, until combined.
    4. Shape into small balls with wet hands. Place on a baking tray lined with parchment paper.
    5. Bake for about 15 minutes, until golden brown. Let cool before serving.

    Amazing recipe! They are very tasty, if someone doesn't have a very sweet tooth you can put about a half of the sugar (around 50gr). I used brown sugar and also put 1-2 tsp vanilla powder. Turned out perfect!

      Hi Priyanka, I wanted to know that also ;) Have you already made them? I guess you could leave the sugar out, b/c the cocos makes the taste (at least in my opinion :) Happy cooking :)

    thanks for the recipe. I did but I couldn't shape into balls. so sticky, although I wet my hands. what was wrong?

    which oven mode(top/bottom/ both/fan) did you use? Mine took more than half hour and got burnt from the base side.

    They're amazing and fill your house with irresistible coconut scent!
    2 tips:
    1) these biscuits are perfect after you make pasta alla carbonara and don't want to waste the egg whites you discarded
    2) try add a spoonful of orange marmalade to the mixture.
