    Balinese sambal (sambal matah and different variations of it) is characterized by lemongrass and shallots, either just chopped or minced. The one in the video looks that it also has some chopped tomatoes. It has similarity to Manadonese dabu-dabu, but it doesn't have lemongrass, but more tomatoes.

    If you crave Indonesian food, and are not in Indonesia: go to the Netherlands. They have superb Indonesian cuisine there, due to their history of colonization. You'll find several good Indonesian restaurants in Amsterdam that you should visit if ever going there. Much more so, than some of the local restaurants that may just be tourist traps and not very good, imo. Like British food, not impressive! ;) You get my drift. Google when you get there and find something well-rated and go for it. There are superb Japanese restaurants, as well as Turkish ones. Amsterdam is a city for people who love food culture from all over the world!
    (Disclaimer; I'm not really claiming ALL food from the Netherlands are bland, but the most authentically cooked dishes I ate (=several) were frankly bland, imo. And my contacts in the Netherlands totally agreed with that assessment. There's some really good stuff, but the interesting part for me was eating the most authentic Indonesian and Japanese food I've ever encountered, and that happens in Amsterdam! Hands down fantastic food! And also, not completely unaffordable!)

    Love some Indomie Spicy Goreng noodles, they sell them here in the UK in Tesco (world foods aisle). The key is to cook 'em, drain 'em THEN dress them with the flavour... different from the other noodles bought here but when you have dry noodles dressed in the various ingredients you'll realise how absolutely awful a Super Noodles are in comparison!
