#67 Victorian Snow Candy Canes or how candy canes did not start with red stripes.

    Every year for Christmas we make these thick and large hand made candy canes at Lofty Pursuits. This time we've made some white ones that hearken back to the original candy cane of the Victorian period that was also white. We've added a twist. These peppermint candy canes also have no food coloring (for anyone who is allergic to that) and is made with no corn syrup (We use a Tapioca Syrup instead). A classic tradition that now more people can enjoy this Holiday Cheer. These were made of course on our Victorian candy equipment.

      Since the candy is softer than glass. The diamond tips would be excessive. I've done glass work and I could accomplish the same effects if needed with stainless cutters. I'm glad you noticed the similarities but on the Rockwell scale sugar is not very hard and a diamond well very cool it's unnecessary. That's not to say if you want to provide me with some amazingly cool diamond shears I wouldn't mine testing them out and see what happens :-)

    you should take some more inspiration from jewel makers and put some gold leaf between the clear stripes and the white core.
    it would not be solid gold once you stretch it but it should either get glitter like or marble like veins behind the stripes. t'would be cool

    I always wonder how hot the sugar is when you’re working with it, like for instance when it’s on the candy puller. It’s just interesting to me, because we as people always associate heat with liquid, which makes sense because increase in temperature of a substance usually results in it melting.
    I just wonder, would my hand end up with a burn if I touched the sugar in that state? like I assume it would, but at the same time, I still have to wonder.

    Very interesting! I wonder whether pulling the candy to trap in air and make it white changes the consistency of the sugar, maybe making it stiffer? Does this make it harder to work with on the table especially combining with sugar that hasn't been pulled like in these candy canes? I think the craftsmanship that goes into your candy is amazing!

    As someone with a mint allergy I just find it kinda funny that your video about making allergy friendly candy has the one candy related thing I'm allergic to! It's fine though, luckily it's just one flavouring, so it's not hard for me to find other candies :)
    (Plus alternate flavoured candy canes are getting more and more popular, so there's that too!)

    Oh my god I have a corn allergy and this makes me so happy. I haven’t had a candy cane in over 5 years but I can have them again! If you made more corn free candy I would fork over an unreasonable amount of money

      We don't directly add any of those flavors to anything but our banana and tutti frutti flavors.

    Are there any nut oils in your candies? I know on your website some candies list almond oil. My little brother loves hard candies but has severe nit allergies so he can’t have anything with nut oils.

      Tanya Sullivan it's the same with any artisan items: machines make far cheaper versions possible. These aren't meant to compete with normal industrial candy canes.

    Alas, not Everyone can enjoy Candy, I am diabetic, and without medical support. So I ?Must abstain from the seasonal enjoyment. It's jus too bad you can't make candy canes with a low or no sugar, or starch ( both raise blood sugar levels)

      My son was just diagnosed with corn allergies. I'd never heard of it either, until his allergist told us the symptoms, and my son ticked every one of them off short of anaphylaxis. In the last week, I've learned there are over 175 FOOD applications to corn, even more commercial (like plastic wraps, gasoline, etc). And we have to avoid them all. It's in EVERYTHING.

    Unfortunately most enamel pins you get now won't be real cloisonné because they use cold enamel which is made using a type of resin instead of glass. You can tell the difference between real enamel and cold enamel by the metal used copper silver and gold are all used for real enamel, and although different metals can be used they aren't that common because you need a different type of enamel than what is available

      +L Lawliet cloisonne means compartmentalized. It refers to the filled walks of metal, no other what fills them. The early examples use cut glass and gemstones without heating. They are all cloisonne.

      Sunny Wu which is why you shouldn't have any if you have strong allergies. It's ok if you only have mild allergies. Google for information about red food dye allergy, it's pretty interesting.

    When you set them out to cool, you leave a gap between them. Would they stick together if they touched while still warm, or is it just easier to put them down quickly like that?

      Kim Metz Uncaramelized sugar is fairly easy to clean once cooled, since it dissolves into hot water readily.
      I don’t know about caramel, though, since I’ve never made any. I’d imagine it’s a bit more difficult due to the chemical changes at that point, if only by a little.
