  • Today's cook is Japanese Miyazaki Wagyu A5 kobe beef on kamado joe's soap stone! With this beautiful steak I wanted my family to experience this amazing cut of beef. The soap stone seemed to be a good option for this cook today.
    I heated up the stone to 450°F / 235°C)

    I would actually be very interested to see how this steak turns out medium-well done. I prefer my steaks to be just barely past the medium level and am considering ordering a few of these for my upcoming birthday.

    I just had A5 BMS 12 wagyu from Japan... way too rich and oily. Definitely cant do a steak alone. You should try Korean HanWoo.

    Gugu, looks like u r the main consumer of wagyu. They should name a cow farm called guge farm, have a wide variety of cows , all breeds , including yak bison water buffalo called a caribou. Beauty cooking gug. Just like how wagyu is top class , u r top class.

    For reference: A5 is the Japanese grading system for the quality/marbling of the meet. The meat is rated on yielding of meat (A, B, C categories) and the quality of the marble (rated from 1-5 scale) A being most yield. 5 being most premium, marbled cut of meat. So A5 is LITERALLY top of the line cut here.

    BMS = Beef Marbling System
    By comparison, USDA Select beef has a BMS of 1, USDA Choice is 2-3, and USDA Prime is 4-5

    USDA Select would be about $5-7 per pound
    USDA Choice would be about $10-15 per pound
    USDA Prime would be about $20 per pound

    Prices vary depending on cut of meat.
