    Many Noodles recipe call for Baking soda, but that ingredient is not strong enough to make Ramen noodles and their very distinctive chewiness and springiness. Baked Baking Soda can solve that problem. If you don't have a pasta machine, place the ramen noodles dough into a solid plastic bag and stamp it with your feet.

    Ahhh man. I thought he was going to hand pull these noodles, then it woulda been authentic. The whole thing about the alkaline is that it makes the dough super elastic, otherwise, they could not be hand-pulled. That’s also why true-ramen has a kinky texture.

    Baking the Baking Soda, turns it into Washing Soda. Is that really okay to use a cleaning agent in the preparation of food? Yes, it is all natural and started out as a food ingredient, a lot of food ingredients can make really good cleaning products. I am just trying to get my head around the idea of this.

    Alex, a lot of people also bake the baking soda to make it more alkaline and increase the pH of the water even further! Google it to see. Also, the best type of noodles are the wavy egg noodles like the ones I get at my favorite ramen place. Can you revisit this and do an episode for wavy egg noodles? I can't find the recipe anywhere.

    sodium bicarbonate in high doses can cause kidney problems, why? well.. sodium is essentially salt, kosher salt is sodium chloride, table salt is sodium iodide, all salt is essentially sodium mixed with something to make a soluble mineral, sodium is a highly reactive metal by default after all.
    (how reactive? how about it goes boom if you drop it in water)

    Dude.. I just ruined my pasta machine. The noodles look great tho, I just used my hand to jam them as they were coming out to make them curly (so you don't have to modify your pasta machine if you don't want to).

    He fails to rest the dough for at least an hour before rolling. Ive read it also helps to knead it in a bread machine for a bit (too stiff for most stand mixers) before making the noodles.

    So I've been watching your videos and others on Ramen. I made some and took pictures to document the progression and finished product. Instead of using sodium carbonate, or konsui, what about just getting alkaline water and just adding less sodium as it leaves a distinct odor on the noodles that of course I'm familiar with but I think I could do without. Or If I can get my hands on it, its possible to get Dionized water at 11.5ph with some kind of Kangen filter. What would be objects to using that? I would love to see a chart that shows color and noodle spring at different PH's of water! I love your videos btw. If you want to see the progression just let me know and I will send you links to all my stuff including homemade pizzas.

    How much Kansui liquid should I use in replacement of the baked baking powder?? I really couldn't find a solid answer online, any suggestions? Or is it that the Kansui liquid replaces the baked baking power+water solution?
