    Many Noodles recipe call for Baking soda, but that ingredient is not strong enough to make Ramen noodles and their very distinctive chewiness and springiness. Baked Baking Soda can solve that problem. If you don't have a pasta machine, place the ramen noodles dough into a solid plastic bag and stamp it with your feet.

    I miss ramen noodles. I can't eat them anymore because gluten messes me up. Maybe I can find substitutes, but it'll probably taste different. That sparkle in your eyes from eating ramen, and that vigor you get... makes me want to eat ramen again.

    From what I understand of Asian noodle making, the reason the all-purpose flour worked better is because of protein content. all-purpose has 10% protein and things like udon are best made with around 9% protein content in their flour.

    I had to comment on this video to say how happy I am right now..
    I watched a video this morning about making homemade ramen noodles after prior failed attempts and I realized the issue was never using BAKED baking soda.
    I went to your channel knowing you would have the perfect recipe because of our shared ramen obsession, and for the first time in my life, I made a perfect ramen noodle. I am Italian and have had a passion for cooking since I could reach a stove, but I've never had a pasta maker so the task is daunting and I have never made a satisfactory noodle. UNTIL TODAY..
    I followed your recipe exactly (after having spent 20 minutes converting the 4 simple ingredients because, UGH America) but I used AP flour (unfortunately the only flour I have at my house at the moment) and I was still terrified it would come out gummy so I added an egg and had to add some extra warm water. I saw your tip about kneading it by putting it into a plastic bag and stepping on it and OMG.. why had I never thought to do this? ..
    Anyway, one novel later, I hand rolled and hand cut EVERY. SINGLE. NOODLE. .. slapped them around in some flour, piled them up into nests, and softly squished the nests together to get the package ramen noodle texture and look and VOILA! I made handmade ramen noodles!! I've been going through so, so much lately and it is amazing how something so simple brought me such joy. Thank you Alex!

    Omg! First two times I made noodles I failed bacause I didn't really know how to form dough with the roller and third time I succeeded until the handle broke. I just bought the damn machine and it broke after 3 uses :D And it was the Atlas wellness 150 which is supposed to be pretty good. The socket part which holds the hand crank handle in place seems to be just glued in there so it just came off. There's no serration or anything, it's perfectly round. I mean hadle itself has those raised metal parts that pervent it from slipping, why can't the part below that have those -.-
    Going to go buy premade noodles now and try again after I have eaten those :D Ragequit!

    A note: all that we were always told about saturated fat vs health is debunked by plenty of modern studies. Specifically, fat, including saturated fat, correlates with fewer heart issues, not more, in a number of vast epidemiologic studies:
    If that seems crazy to you remember that a few decades ago MHD were pressuring pregnant women to favor powder milk. Then they pressured her to do the opposite. It's more or less how medical science works apparently. Maybe in a few decades, a new stud will find that saturated fats were indeed bad, but only if eaten on a Friday?

    Ahhh man. I thought he was going to hand pull these noodles, then it woulda been authentic. The whole thing about the alkaline is that it makes the dough super elastic, otherwise, they could not be hand-pulled. That’s also why true-ramen has a kinky texture.

    Baking the Baking Soda, turns it into Washing Soda. Is that really okay to use a cleaning agent in the preparation of food? Yes, it is all natural and started out as a food ingredient, a lot of food ingredients can make really good cleaning products. I am just trying to get my head around the idea of this.

    Alex, a lot of people also bake the baking soda to make it more alkaline and increase the pH of the water even further! Google it to see. Also, the best type of noodles are the wavy egg noodles like the ones I get at my favorite ramen place. Can you revisit this and do an episode for wavy egg noodles? I can't find the recipe anywhere.
