    Is that monkfish tail? I get a bit confused with monkfish. It's an ugly bugger and I don't buy it often, especially as I live in Spain and they call it rape here.

    I really like your technique with the fish! I had never thought of adding the extra batter on the top side of the fish while deep frying, that’s genius. One thing that bothers me about so many chefs is their general direction to use any combination of fresh herbs, as if they are all interchangeable. Each one has a unique flavor and aroma, and choosing the wrong one can ruin a dish completely. I mean, putting cilantro, lemon balm and fennel together sounds pretty awful to me, but without any guidance from the recipe’s creator, it is easy to go astray. Please be a little more specific when you use fresh/dried herbs whenever possible.

    Mr French Guy, What!!!! You are a despoiler of all that is holy, how dare you mangle perfectly good food fit for rulers of the Empire in such a Teutonic way. Herbs in a fancy batter, what are you doing.... Oh I know, yes yes yes, making a TVclip movie to pacify your audience of tens of thousands of people. Fish and chips is simple, no, I mean it is SIMPLE. Cheapest easiest beer batter and the fish cooks for long enough when it floats and is the right colour. I saw what you did to Chips yesterday( I am playing catch up) and I was, yes, a little impressed, you discovered how we Northern English make superior chips, Not French Fries, they are an American Abomination, but chips that can stand up for themselves and like us peoples, are warm and soft and fluffy on the inside. But your fish, Non, you bashed the batter too far with too many ingredients. But, almost ok, almost. Wait, WHAT did you DO... You dipped the fish in salad cream.... Oh you poor French Guy, salt and vinegar works, ( not really vinegar, but a non-brewed condiment.). Come over to England and leave your fancy pants at home, grab a beer and then slip into a chippy (Fish and Chip shop) and get a great fish and chips, it will surprise you just how good it really is when it is done the right way.

    damn, I would never think of drizzling batter on top, let alone that it would work.. This is like the invention of bacon! free extra crisp! I'm always left with batter anyways, now I know I just can ultra-crispefy all my fried fish and chicken!

    Have you done your "Chips" video? I prefer malt vinegar with my fish. How does this recipe stand up to the vinegar? Have you ever tried halibut (flétan)? You mention Mediterranean herbs. Is that the same as Herbes de Provence or a different herb blend?

    the batter is the flavor of the fish, some people use soda in the batter.. breadcrumb crust might taste more crunchy.. and with a good tartar sauce ..

    We try a lot of different recipes from many different sources (youtube, magazine, tv) and a lot of the time we fail hard! lol the worst one was home made soba noodles, they looked like shitty chewy buckwheat macaroni instead. But your fish, chips, and tartare recipe has made us look like master chefs, our results was so delicious it is now our "show-off" dish. It looked good as well, so plumped and juicy, golden! C'est parfait!
    If you ever have a special one-off cooking class in Paris, we're coming for you! lol that sounds like a threat but it's not. Or is it...

      It depends how dirty the oil is. Wait for the oil to cool and filter it back into a plastic bottle using a fine mesh. If the oil has become cloudy, discoloured or smells funny, screw on the bottle's lid and put it in the landfill waste bin or if your city has an oil waste/recycling bin put it in there. Do not pour it down the sink as this can cause blockages.

      Beer is the best substitute for beer. One beer, lost in batter, will not turn you into a raving alcoholic, it is flavouring not a sadistic brawl through the gutters of the nearest brewery sharing life with rats, drunks and misfits, it is just flavouring. Without beer, beer batter is not beer batter, it is just 'batter'.

    Hey! I tried your recipe but my batter turned out harder and less crispy and a bit chewy. I used baking powder instead of soda. Am I doing something wrong?
