Line your pan with double parchment and bake in a water bath. I don't know why these you tube cooking videos don't include the tips one needs to make the dish successful. Also, always use less egg than they say in the video or it becomes a runny mess.

Faris Aqil That's the point. He's adding the lemon zest, because that's where you can get concentrated lemon flavor. But don't grate too much or you'll end up grating the white part, which is bitter.
How does he get it light up the top but brown around? Anyone know?
Just turn on the bake element, and only turn on the broiler to make sure the top part is set.
