Just 5 years ago, the FDA published its first ever guidance on labeling of gluten free products. Before that, from the 1950s to 2014, all people with proven Celiac or valid IgE mediated anaphylactic allergy to gluten, gluten ataxia, gluten triggered psychosis, gluten triggered migraines, and general gluten sensitivity, ... had to make their best guess for gluten free foods. The reason it's a 'trend' now is because food companies have been responding to the FDA guidance, sometimes in a positive way, by providing labeling, and sometimes negatively.
One of those negative ways is to attempt to discredit the need for labeling by influencing opinion on social media. www.fda.gov/Food/GuidanceRegulation/GuidanceDocumentsRegulatoryInformation/Allergens/ucm362880.htm It's really sad when people make jokes in irresponsible ways, that can hurt people, without ever checking to see what the FDA has to say about it. FDA is far from perfect, but Trevor and lots of misinformed people could've saved themselves the embarrassment of putting foot in mouth, by just checking the site.
Premium food ideas have always been very profitable, Grass Fed, Organic and Gluten Free, not to mention Vegan, and Paleo labels all increase profits for everyone from farmers to manufacturers, shipping companies, and stores. They also spur innovation. They don't fit the plans of chemical companies though, who prefer to plan for a food system that requires the use of chemicals to produce food (glyphosate ripening of grains, fertilizer dependence, antibiotics as a growth enhancer, etc..).
If you want to understand more about it, go and see the website "Cornucopia Institute" which is a watchdog for Organic food producers, or the website "Gluten Free Watchdog" which does the same for GF labeling. If you really want to capitulate to the chem co's, hey go ahead. I'll be on the side of the clean food / slow food people though.
And what's driving the criticism of GF is probably more corporate oriented than any concern for health. Don't be fooled into thinking we're living under a government. We're living in the world created by corporations that are currently poorly regulated. Trevor just directed us to stand in the way of an oncoming bus by ridiculing food sensitivity, in particular gluten-related allergy. It's irresponsible and short sighted.
It would've been funnier to make fun of the study's probable biases or funding or to show how it compares to other studies done on that subject. Science is not perfect, not until humans are perfect.

I am unfortunately one of the lucky ones. Honestly the lion’s share of my financial means is because I chose not to have children. I can only imagine how heartbreaking it is for people who want to be parents and have to make this decision for $$ reasons.

I recently started attending a funeral service school and the first rule we learned in ethics was that it's a law in NY to give prices over the phone to any one who calls and asks for prices even if they are not looking to make arrangements. Anyone who comes in we give them a paper with a list of prices (that we go over with them and/or that they take with them) of the funeral home expenses because not all homes charge the same prices so people do like to look around and we are required to tell anyone the prices at any time asked. Apparently Funeral Homes will get "secret shoppers" as well to make sure workers are adhering to the proper laws and conducts and the most common one is calling and asking for pricing. I wondered why hospitals didn't do the same.

Omg what is this? Trevor, this is spreading very horrendous information. Okay actual people who know something, know but when you have a real allergy and you consume stuff that don't work for you, you actually die (anaphylactic shock). I died twice almost, only the hospital intensive care saved me. - Besides these food allergies where this came from for me, you also can have very serious allergies for animals, dust mites and more- and they have a incapacitating effect.

gf sensitivities don't exist lol gluten allergies and celiac diseases do obviously. most people feel mildly like crap after eating bread is because of the commercial yeast. slowly leavened bread with long living yeast strains are what we should be eating (sourdough is amazing). because the body can't properly ferment shitty commercial yeast. it rises too quickly to keep up with consumer demand for wonder bread. buy local slowly leavened bread and watch how quick your 'allergies' stop.

Well, if you don't have healthcare, then you probably won't go to the doctor to get checked for suspected allergies. You'll just "self-diagnose" to stay on the safe side. Had tomatoes yesterday? Threw up tonight? Probably allergic to tomatoes!

Her and her mom had no furniture at their house and moved a lot. She only stayed for the summer and left suddenly. Ohhh Trevor, you're going to trigger everyone now with that gluten comment. Really way off base there dude. Way off base. 80% of people worldwide with Celiac disease are not diagnosed at all. The highest rate int he world is probably in Algeria (that's right, Africa, man!), or Pakistan. Neither of those places is it possible for those people to avoid gluten. They die of strokes and or organ failure. It's absolutely tragic. Have some mercy. Celiac is not an allergy, although some people do have an IgE mediated allergy to gluten. It's a protein that acts as an opiate, can trigger psychosis in people who are sensitive (even if they aren't celiacs), and can trigger balance and muscle weakness in gluten ataxia (also not celiac, but causes a rare kind of brain damage). It's actually under diagnosed. Wheat has been bred to have way more gluten than ever before so it's triggering more and more of these illnesses now. It's being sprayed with glyphosate just before harvest which sensitizes people to it because glyphosate disrupts nerves too. We've created a monster.

My sister's husband got surgery on a triple hernia in his back including two nights' stay and they paid 300 euros, meds-room-specialist-surgery-meals included. While this might be a good step to have hospitals disclose their prices, ultimately its private insurances who are the ones to blame and the fact we don’t have universal healthcare. I can’t speak for every hospitals, but keeping their prices a wild secret unfortunately is the only way they can keep afloat when faced with cost cutting demands from insurances.

It's not grains that make people sick, it's the additives in all our prepared food which are getting people sick. No bread is just wheat, flour, salt, and yeast. No ingredient label on the back will ever have less than 5 ingredients (unless it's at a high end specialty market). To keep large box stores full, we have to put in additives for shelf live and a lot of those are sourced from industrial byproducts. Until more Americans start growing their own food, this issue will continue.

I don't most people who claim to have an allergy to gluten even know what it is. It's our latest catch phrase- like gotcha before it. Everything says its gluten free, things that don't even have gluten in them like milk and ice cream. It just goes to show people are reacting hysterically over things that they haven't even bothered to investigate. And in six months, it'll be the next big made up thing.

The food allergy study is basically a PSA on why you don't fucking self-diagnose. Seriously, if the test isn't positive you don't have the allergy. The problem really isn't doctors over-diagnosing. If anyone at the Daily Show had actually read the study they would have seen that most of those people diagnosed themselves or were diagnosed by a homeopathic person, chiropractor, alternative medicine practitioner, or some other pseudo science bullshit person.Allergy doctors will only diagnose you if you have a positive test result. It's a yes or no, no sensitivities, no intolerance.

I'm allergic to soy, but when I eat out the food service operation either doesn't know what soy is or does not have the necessary allergen information on hand. If I want to eat outside, I have to look up the information online and unless it's a fast food corporation, there usually isn't any chart. The other day, I called ahead to a breakfast diner to see their options for people with soy allergies and they said they could accommodate me. When I got there, they told me that everything they had uses a base of soybean oil except for oatmeal and fruit. Less than a week ago, a pizza place could not provide information, so I ordered a salad without any dressing. The salad had some kind of vinaigrette, and I had a reaction to it a few hours later. My favorite interaction with someone however, was by far the following:
Me: Hi, I'd like to know the allergy information pertaining to soy.
Cashier: Um, we have gluten free pizzas.
Me: No, it's soy. It's different.
Cashier: What do you mean by soy?
Me: Like soy lecithin, soybean oil, etc. Anything with soy.
    Cashier: So like, soy sauce?
    Me: Yes.
    Cashier: I'll go check.
    Me: *waits*
Cashier: Okay, so we don't have your information, but like, you won't die, right?
    Me: Umm... No?
Sorry for the long rant. As a person that wants to go into food service as a career, I just wish places made their allergy information readily available to the public, at least for the top eight allergens.
