    For other vegetarians/vegans out there, I use shiitake or/and seaweed instead ^_^ It tastes just like in the japanese resturants I've been to (before I knew what dashi was) :)

    The great thing about this video is it reminded me that even though I live thousands of miles away from Japan, somewhere in the world, we still share the similar values such as a meal cooked from family, and comfort foods. We are all so connected to each other in small ways.

    Nice trick using a small strainer to disperse the miso in stock. As she mentioned, I've damaged the tofu stirring it directly in.

    I just made this but I added one piece of kombu kelp in the dashi stock and 2 tablespoons of wakame kelp in the soup. It tasted so good! Thanks!

      Yes, it's the matter of preference. You can use white or dark, or you can mix both.

      Dashi is actually available in the US I bought some yesterday. Most prime countries have terrible fishing practices and often over fish. You should base your likes and dislikes on the video made not how you got there. Otherwise just look up a recipe online? Nobody cares who your parents are

    Tofu will be more tasty if you tear them or cut with spoon.
    The rough surface will suck the soup.

      No, because the saltiness comes from both Dashi stock and Miso paste , which balances the Umani flavour

      so did I! It was a packaged miso concentrate but the flavor was definitely unique and like nothing I've ever had before :) (although it did remind me of tamarind paste in a way?)

      If you are vegan then you can use Kombu stock instead of use dashi stock

    I'm planning to make miso soup soon but I cannot stand onions. The only flavour substitute I can think of is garlic... I have seen that a lot of savoury recipes call for daikon but I cannot get them here. Any ideas?

      Seaweed is usually found in miso so if you want you can add that

      Green onions can be left out. Just really a garnish. There's other types of miso soups so you might want to look around for more recipes

    Should the color of the soup be light because I had miso soup in a restaurant and the color was really brown and it didn't taste or smell good. I wanted to throw up T-T

      What I do is take screen shots of stuff. and walk thro the store and find them.. if worse case i cant find something. I'll show the picture to someone who works there. :) that helps me all the time.

    I cant seem to find dashi where I live, but we do have something called "fish stock" by a western brand called campbells. They make chicken stocks and soups and what not. Would that be the same as dashi? And even if it were different, would it still be acceptable to use instead of dashi? I cant find dashi or bonito flakes anywhere, since its pretty uncommon to get foreign foods around here.

      +GeneralChickenPeice If you're from the US or Canada just use amazon or find an online Asian food store. I'm from the UK and although there are probably some Asian supermarkets I could find I prefer to just purchase online. If you are from the UK, not sure if you are, there is an online shop called JapanCentre which has daishi.
