      Ahmad Bamieh I can't be sure, but it sounds like these were recorded live, from within the audience. It sounds like it may be sounds from within the shop, but notice how the crowd changes abruptly with the music. The second song is a live cover of Out Of My Head by Fastball (1998).

    two questions,
    1. how do you know how much food coloring you need per image candy batch
    2. this batch seemed smaller when you poured it onto the table but your die size seemed to exactly match how much was poured, have you ever over poured or have you ever used the whole table?

      1. Experience. I use enough to make the color I want. If I use too much it can get sticky, o tend to put in less than I need, the color is often more important than the size of the color.
      2. I have over pored, but we know how far to space the bars by the size of the batch. Some of our bars are scribed in one inch increments. It's not clear from the videos.

      +Lofty Pursuits I guess I did not answer the question right. No we do not always make swans. Sometimes the end looks like something and we make something out of it. I've seen squids made, and other shapes, but swans are often easy and put a smile on peoples faces. Squids less so. Its sort of like a rorschach test with sugar.

    When the people are picking up the hot candy mix to let it drip down, how hot are the hottest and coolest parts of the candy at that point?

      +Octet Fan The hottest point is about 300 degrees, the coolest is just warm to the touch. When we fold the candy, the temperature averages to way above what is comfortable, so at a certain point there are no more cool bits to grab, and the heavy gloves go on.

    Honesty, the thing that fascinantes me most of this videos is the table. Its just my personality i guess, but i just love to think about how much history it has. Its a very old profession, i think you said in one video that to learn it you have to find someone who teaches you, be in the right place at the right time. You are very lucky. In my bussines, expirienced (and old) people who know the most clasic methods dont want to teach it to anyone because they think theyll steal their place. Isnt it crazy that they prefer to let it die than sharing it? but thats how it is. Anyway, great job

      +sasy1533 Thanks, I feel the same way, but my experience with old candy makers is very different. One drove half way across the country for a vacation, and stopped in, spent a day with us and taught us what he knew just to make sure that knowledge was not lost. Others opened their cookbooks for us, some essentially gave us equipment because they knew we would use it and it would not be destroyed.

      We are here because of their generosity. We stand on the shoulders of the masters..

      +Andrew Morphas you can make some hard candy at home but they use heatpads it looks like to keep the sugar from cooling to much and hardening, so this way they can spend more time to mould it into the right shape. but you always make some basic rock candy by pouring the syrup into a greased cookie sheet and then shattering it up once it's cooled.

      +Molly Foxe It is a live recording of our old house band, but they were not playing while we made this batch of candy. Our band was called "Bounce House" it was a three piece swing band and would play at the store one day per month. They were very very good and we miss them. But no, I dubbed their music over the candy making video, since they are good friends and let me use their music.

    How long does it take to master this art? I would imagine you start off with some simple designs and then progress to more intricate and complicated ones.

    I watched all of your videos and was so amazed by this type of candy making that i decided too try at home... and well lets just say it didn't turn out so good. After looking all over the internet i noticed every recipe seems to be different. I'm not looking for any secret recipes just wondering your ratio of ingredients. Do you use corn syrup or just water and sugar. also do you really need cream of tartar? anything helps.

      +PianoMan63T It's not just the ingredients, although there are many ways to make the candy. The real issue is the heating system. I'm not sure it is possible to cook the candy properly on a standard cook top.
