  • The phrase "deep-fried pizza" might conjure up images of clogged arteries and Texas state fairs. But at Don Antonio-one of Manhattan's most authentic pizzerias-chef Roberto Caporuscio is slowly converting the masses to a Neapolitan classic. Using tomatoes from San Marzano and smoked buffalo mozzarella from Capua, the restaurant's signature montanara pizza is a fried dish rooted in freshness. Thanks to a Neapolitan oven powered by volcanic stone, the fried dough quickly cooks off its oil and grease, leaving a flaky crust and perfectly layered pie.

    yeah this guy doesn't know shit about montanara, first, it's only cooked in the fryer, no oven, second, ther's no mozzarella or ragu on the montanara, it's only fresh tomato sauce, parmigiano ( that's how you're suppost to say parmesan), and fresh basil leaves.
    it's this poor in ingredients and toppings because it's the fried bred that sherpards would do on the mountains, faraway from the city, as a matter of fact, montanara basically means something that comes from the mountain.

      Maybe because it's tough competition in USA, since there are lots of Italians there making pizza?!
      Some Italian pizzaiolos should start coming to northern Europe and do proper pizza, like in Swedistan, where almost every 'pizza' (aka wannabe-pizza) is made by Shapbdullas from the Middle-East/North-Africa... And the few wood-oven pizzerias in Swedistan are crazy expensive, like 10+ USD per pizza (while in Naples/Italy, a simple pizza costs 4 Euro).

    Wow! I just had one last night at Deluca Trattoria in El Segundo, CA that was amazing, but it was a Calzone. But I had not heard of them before that then I come home and see this video. . Seriously some of the best Italian I have had in LA. It is so random to the timing here.

      kamal sorath On a side note when you don't want to eat pizza here in Italy your other options are pretty much all healthy. Swordfish, pasta, steak, roasted chicken, "affettato" (uncooked meat like salame and prosciutto and local cheese) with a wide variety of breads, lots of tomato dishes, eggs, spicy food, potato or egg based pasta (gnocchi, tortellini), eggplants, peppers, polenta...and if you like fruit there's plenty of fresh local apples, berries, strawberries, prunes, apricots, peaches, while your alcohol consumption can consist in chianti or verdicchio or lacrima, which don't just harm you but have benefits when you drink them once in a while.
      So even if you eat the fattest pizza ever you can balance it with all the proteins and greens you want really.
      You Americans should worry a lot more about what you eat. You have the climate variety to produce good grapes and tomatoes while having great cow meat but you settle for the worst industrial stuff for the sake of convenience, which is a shame.

      kamal sorath We have a pizza only made of buffalo mozzarella, one with just 4 cheeses on it, sometimes people put sausages, salame and fries on it and yet it really isn't that bad.
      If you have sauce on it it's always good because it's basically just mashed tomatoes with some salt which is 100% good for you (unlike ketchup). You can also have no mozzarella and put tuna and onions on it if you feel like it. What you should avoid are cheap factory ingredients Americans put on everything and go for quality stuff instead. Cheddar is not really a good choice for pizza anyways and you should avoid it. I understand it might cost a lot for foreigners to get the good ingredients but if you want to eat it proper like it's intended to be you have to spend more. If you replace the good fresh fish in sushi with frozen stuff from another continent of course it'll be less tasty and healthy, but if you eat a proper sushi meal which costs more you'll feel great.

      +Sarincrow yeah but pizza in usa has too much cheese on it. it's different than the one made in italy. In italy I've even seen pizza's without any sauce but in USA? only if you have super ton of cheese is it considered good enough and i guess that wasn't enough now they fry it too

      You got your vegetables, carbs, calcium and if you put salame or prosciutto on it even proteins. It's a complete meal. Unless you're one of those queers who feels insecure unless you have perfectly sculpted abs and can only eat raw fish and eggs, it won't harm you at all. If anything it would make your diet better to eat a decent pizza from now and then.
      How do you think italians have a 10% obesity rate (being one of the slimmest countries in Europe) while no state in the U.S. has a percentage lower than 25%? We eat pizza and pasta every day. If it weren't healthy we'd be dead.
      Now, let's talk about eating bacon and a peanut butter sandwich everyday for breakfast....that's fucked up.
