  • The phrase "deep-fried pizza" might conjure up images of clogged arteries and Texas state fairs. But at Don Antonio-one of Manhattan's most authentic pizzerias-chef Roberto Caporuscio is slowly converting the masses to a Neapolitan classic. Using tomatoes from San Marzano and smoked buffalo mozzarella from Capua, the restaurant's signature montanara pizza is a fried dish rooted in freshness. Thanks to a Neapolitan oven powered by volcanic stone, the fried dough quickly cooks off its oil and grease, leaving a flaky crust and perfectly layered pie.

    yeah this guy doesn't know shit about montanara, first, it's only cooked in the fryer, no oven, second, ther's no mozzarella or ragu on the montanara, it's only fresh tomato sauce, parmigiano ( that's how you're suppost to say parmesan), and fresh basil leaves.
    it's this poor in ingredients and toppings because it's the fried bred that sherpards would do on the mountains, faraway from the city, as a matter of fact, montanara basically means something that comes from the mountain.

      Maybe because it's tough competition in USA, since there are lots of Italians there making pizza?!
      Some Italian pizzaiolos should start coming to northern Europe and do proper pizza, like in Swedistan, where almost every 'pizza' (aka wannabe-pizza) is made by Shapbdullas from the Middle-East/North-Africa... And the few wood-oven pizzerias in Swedistan are crazy expensive, like 10+ USD per pizza (while in Naples/Italy, a simple pizza costs 4 Euro).

    Wow! I just had one last night at Deluca Trattoria in El Segundo, CA that was amazing, but it was a Calzone. But I had not heard of them before that then I come home and see this video. . Seriously some of the best Italian I have had in LA. It is so random to the timing here.
