  • In New York City, Neapolitan-style pizza gets a lot of shine. But there's another thin-crust pie from Italy that's worthy of a place in your pizza rotation. At Martina, Roman-style pizza is the main event-a dish defined by its thin, cracker-like crust, sparse layer of sauce, and evenly proportioned toppings. Left in the oven for an extra 30 seconds-an eternity in the eyes of a pizzaiolo-the pie develops a crispy exterior and perfectly charred underside. When at Martina, eat as the Romans do.

    The pizza i had in rome had super fluffy crust but i guess that was naples style and i did have a really good thin one

      There's two styles of roman pizza which i'm aware of. The thin crust like this and the thicker, fluffier crusted ones cut into squares and sold by weight.

    Can we take a minute to appreciate this guy's speaking skills? Not boring, but not overly and awkwardly expressive either. Never stutters or uses filler words, speaks at a pretty quick pace, gestures enough but doesn't overdo it, and provides a constant stream of useful information. Good shit guy. This is something that's becoming increasingly hard to find in entertainment, regardless of the topic, so it's refreshing to see someone do it so well.
    Also your pizza looks fantastic and I wish I lived close enough to that side of the country to try it some time.

    That wire rack thing is a good tip. That might be what's missing from my homemade pizzas to firm up the crust. I mean aside from the giant pizza oven, the fancy toppings, yeah, actually I still have a lot to learn.

    There needs to a group, association, whatever, that proudly displays that they offer Pizza Romana Tonda (thin crust, Roman style pizza, like this!) for those who prefer it. Google Roman style pizza and unfortunately you will also find Pizza al Taglia (individual slices, cut, to take away or eat in. Good, but not this kind of pizza). Also Pizza alla Metro (pre-cooked pizza or focaccia this is sold by length). What Martina-- and many pizzerias in Rome-- offer is these thin crust pizzas, 10- 12 inches in diameter, with very little cornice at the rim (unlike Neapolitan pizzas). Like Nick, I prefer the Roman style.

    Downgrading the pride and heritage of the Neapolitan pizza tradition does not make Your interpretation of the Roman pizza Tonda superior!
    Especially if Your arguments are nothing but hot air, You focus on the taste development of the dough by proofing it in a fridge. The cold fermentation slows the development down.
    Feel free too prefer thin crispy pizza (nothing new to the USA) but It is the Neapolitan pizza that became a worldwide success, got UNESCO status and is considered the most difficult pizza to master.
    Romans are known for Pizza A taglio and their many excellent Pasta classics.
