    I stopped watching because I don't believe this guy.
    I think he's lying and trying to manipulate the public.

    The documentary I watched (which could be wrong, of course), explained that the reason why Kobe beef cows produce their meat with marbled fat is because not only do their farmers provide them with a relaxing life, along with a lot of land to run and play on, but the massaging itself pushes their top fat layers down into their muscles, and over time and many generations, it produces that marbeling effect. Meaning, similar cows who have marbeling without being massaged is because, as he said, "genetics", basically the hesitage of that line went through that treatment. All these diffrent specialized methods also produce different levels of marbled fat. I mean, sure, the film I saw could have been totally wrong, but this guy was presenting himself as the "expert" so I would have expected him to have gone into more detail instead of just saying something like "the massaging part is a myth, these specific type of cows are just born with those genetics"... it's just... sorry lol but every species "evolved" specific traits due to actions. The other film I watched made more sense.

    It would also make more sense if they're trying to manipulate the market because doing all the needed steps to have that same type of marbeling is actually really expensive.... and entrepeneurs would love to drop down the price so they can mass produce it as much as the horror festival they do to cows around the rest of the world.
    It's like they want to piggy back ride on the repuration of kobe o,o ... little bastards lol but hey, if it tastes good, then it just tastes good. What's with all thie bs?

    I was in Japantown here in San Francisco yesterday. I'd been inspired by the tempura show to try to find some higher end tempura. I wandered through Miyako Mall & Kintetsu Mall and then went across the street into the stores of Japan Center and I kept asking Japanese people who lived and worked in the area about tempura. I talked about the show and the high end tempura you showed from New York and everyone said there was nothing like that in San Francisco. An older gentleman in Kinokuniya (I ended up buying a book on drawing manga), said it was because San Francisco is not New York and that if you wanted higher end Japanese food you'd have to go to New York City. Really? Do you know about Japanese food experiences in San Francisco that are exciting? I don't mean expensive, although I could save for something extraordinary, it could also be inexpensive casual food done really well, right? Help!!!

      Um, those cows are pampered pretty damn well. And the 12 month raising time frame makes the supply very low, so that's why. I think if the cows were treated any differently, the beef would be just average or slightly above average.
