When I realized one of the themes was "yo-yo", I immediately thought of Tommy Smothers. Then you go an announce that you have a signed yo-yo from him. So cool!

    A. Is the the hook rusty and
B.if the are rusty do they get washed

    • Lofty Pursuits
Lofty Pursuits  6 months ago +1

The hook gets washed daily. It also gets seasoned with bees wax it does not rust. Do you let your cast iron skillet rust?

Sudden thought. Would it be possible to use a rolling pin with the candies? Like it know its hand crafted and we dont want the candies to be so uniform or mass produced but could it have a balance?

  • PCShogun

How do you remove the sugar stuck onto the hook when you are done pulling?

    • PCShogun
      PCShogun 2 years ago

I see. I had not thought of that. Putting crystals into molten sugar causes it to recrystallize. I should have thought of that. Thanks for the explanation.

    • Lofty Pursuits
      Lofty Pursuits  2 years ago

That could leave crystalized shards of candy thhat candy act as seed crystals, and cause you to lose the whole batch or at least vastly shorten it's shelf life for a few tablespoons of sugar you save. Better to leave the lump, it will be too cold to transfer flavor to the next batch, and just clean it at the end of the day. The only folks who hit it with a hammer are those who are in a rush and do the worry about how long their candy will store. Either that or the hook does not come off the wall and can't be sanitized.

    • PCShogun
      PCShogun 2 years ago

LOL, I just thought you let it harden and then you hit it with a hammer :-)

    • Lofty Pursuits
      Lofty Pursuits  2 years ago

+PCShogun the hook is removed from the wall and put in a pot of boiling water. A few minutes later it is clean and sanitized. Sugar dissolves of hot water and ends up being very convenient when cleaning up after candy making.

why do you swing the scissors at the logs instead of cutting them normally? is it so that the compression it causes to the image is isolated to one side?

    • Lofty Pursuits
Lofty Pursuits  2 years ago +2

I've tried sharp cleavers. This works better.

    • Cory Goodman
Cory Goodman 2 years ago +2

@Lofty Pursuits I figured something with a thinner edge would be more suited at cutting it cleanly. Any chance of a Lofty Pursuits candy cutting machete? I'm sure the insurance company would love that
One day I'm coming down there. Screw Disney World; I want to see public displays of confection

    • Lofty Pursuits
      Lofty Pursuits  2 years ago

+Cory Goodman The sugar is this state is a non-newtonian fluid. Strike it hard and it shatters cleanly, showing the image, cut it and the candy compresses like clay, and pinches the image inside. Harder to do that to say :) The scissors handles works well, but so do our choppers. More leverage and mass with the scissors.
