      Through science, many many observations and logic. Scientists use all the data that they know thus far to construct the model of how a neutron star would work. But there are still holes and the areas of unknown (for instance, what's going on inside of the neutron star's core). So it's an evolving subject. it could very well happen that we discover something new in the future that could change our outlook on how these stars work - that's the beauty of science. For now though, this is all we got.
