    You should make the inside of the apple with the white candy and then wrap the apple in the pink colour, I think it would look better personally.

    I love that someone actually thought to make a "RED APPLE" candy for once! All you ever see is nasty green apple everything! I love actuall green apples, but not things flavored like em'! Oh man, i can actually taste that crisp, juicy, ripe, delicious red apple candy right now!

      Probably because he keeps the coloured candy clear/transparent and he'd have to mix the citric acid into the candy which would change the colouring

    Am I the only one who gets annoyed when the people take the free candy and just toss it in their mouths without even looking at it? Like he spends all this effort making the image in the candy and they just couldn't care less. Why even sit there watching the whole process if you're not even going to admire the finished product for even a second?

    when you guys order from lofty pursuits be careful! I ordered and it's been months an I still haven't received my candy and when I ask why, he tells me he doesn't know and then NEVER gets back to me. I love this store and want to support you guys but I would also love to receive my candy. this is torture.

      Joep b I grew up in NYC. Did you know the classic Brooklyn accent in just English spoken with a rural Dutch accent? Almost 400 years later and it still lives. I took the easy documentation route. little in the way of the Dutch records survive. I'm sure there were apple trees near the Bowery judging by the name, but I can't tell you when.

    What's the name of the music used? I love old blues like that, been on a Howlin' Wolf kick lately. This apple candy looks so beautiful. I remember when I first saw image candy as a kid, it seemed like magic. Have you ever thought about making rhubarb flavoured candy? I think it might be tasty. Maple syrup maybe, maple syrup drops or something?

      Shortly after the hurricane (that missed us, we are close to the west coast of the state) we moved to a new location and expanded in theory our candy area. In theory because the contractors are running behind. :(

      One to two weeks to ship, but it keeps getting faster. We're getting more efficant. That is in general. There are issues this week, I should warn you, we had a hurricane here on Thursday. We have fallen further behind due to the high humidity. We hope to be caught up again by Thursday of this week. Sorry about any delays.

      Nobody in Tallahassee got killed, thank goodness.
      The store did fine. It was one of the few public spaces that did not lose power, so we have been cell phone charging central for the past few days. I put out power strips all over the store.
      My home just got power a few hours ago. I celebrated with a hot shower. We did fairly well, none of the giant trees over my house fell. No damage, the generator kept our food intact, and our gas stover cooked it. I forgot when i set stuff up that a gas water heater still needs power to light the gas. The stove we could do with matches :). I guess a rewire is in order to get the generator to run the sparker on the hot water heater too.
      All in all the city faired well. We lost some very old oak trees, and the political machine that is the city is blaming each others party for not doing enough. That being said, in a city with about 140 households, we went from 110,000 having no power when the storm hit, to 70K the morning after the storm, to 25K as of this morning. Not too bad. We cooled hundreds of people off with our ice cream and working AC, and we gave people a place to hang out and play board games.
      In short my ice cream did not melt. The humidity has dropped enough for me to make candy again, and I got a hot shower. I think life is good right now.

    you know, if you tap the end of the pulling hook with a hammer/mallet it will keep the candy from sticking 😄

      I wonder why they do it. They get hardened candy off into the pulled candy with that hammering. I don't want the candy one cooled to be re-heated back in my lump of sugar. It increases the chance of crystallization of the whole batch, and will reduce the storage life of the candy. I want my candy to last as long as possible.
      What I've noticed is that candy makers who do this have a hook that can not come off the wall to be cleaned. so I think they have to do this to get the candy off the hook. We just remove the hook from the wall, put it in the cleaning pot (a pot of boiling water) and 5 minutes later the hook is clean, and sanitized.
      I have no idea how you would sanitize a hook connected to the wall.

      No, because that leaves bits of cool candy in the mass that leads to crystalization. You only have to do that if you hook can't come off the wall to be cleaned. This leaves the question how do they sanitize it attached to the wall. We boil our hook for a few minutes to clean it and sanitized it.

      It never goes completely clear, but it will become more clear. If I was not worried about it lasting more than a day or two, I could cook it to a lower temp, and it would be much clearer, but that does not work in florida ... too much humidity.

      no, we make it as needed. We are usually out Friday and Saturday afternoon. A lot of the work take two candy makers so that gets schedules when the candy makers have time to work together.

    Would it be possible to store the smaller rods of candy and cut it later when the humidity is higher? Or would that ruin the candy? Hope you all stay safe!

      Cut now. You want to cut them when the humidity is lower. It's not the cutting. If the humidity is too high you can't easily cook all the water out of the sugar.

    Yeah, the apple pie thing is weird... And I've always heard the Dutch invented it. But either way, not America, which is what makes it amusing. Kind of how the British always complain about Americans using the word Soccer when they are the ones who invented the word in the first place as a slang for Association Football :P

      He has said in previous video that he only adds it to the area that is going to be white, because the citric acid powder itself is white and makes little specks if he puts it in coloured areas :)
