Sous Vide GARLIC EXPERIMENT! What's the best way to use GARLIC with your steak!

  • I put a final decision on how to use garlic in your steak cooking sous vide! After several subscribers brought to my attention that raw garlic should not be used with sous vide I decided to find out the best way to use it. I really tested GARLIC on this video. I used garlic powder, garlic paste, minced garlic and raw garlic (which I decided to roast it to maximize the flavor and also to avoid the raw garlic situation) For this experiment I used New York Strip steak! They were all 1 1/2 inch thick and the best steaks available at the butcher shop that day.
    As you know in my recipes I always use raw garlic and I wanted to put a final decision on this experiment and answer the question what's the best way to use garlic with sous vide. I was so socked by the results I still can't believe it. The result shocked me more than the butter experiment. I am a huge fan of garlic and this video is a total shocker. However, I am glad I did it as I want to make my steaks better and better everytime. As always guys I did try to make this video as entertaining as possible for you.     1 tbsp Garlic Powder
    1 tbsp Garlic Paste
    1 tbsp Minced Garlic
    3 Cloves of Roasted Garlic

    Okay I have to say, this was not a fair experiment. All the other steaks got very good coverage of garlic. The roasted garlic had very small points of contact with the steak. Next time either add more or mash it up all over the steak to get a fair comparison. If you think about it, the steaks with the most coverage (a powder and a paste) did better than those with the least coverage.

    I agree with the others that said you need to actually spread the roasted garlic over the steak to get the same kind of contact area against the meat and breaking the cell walls to really infuse the flavor into the meat. Setting roasted whole cloves on meat is pointless.

    I feel like I already know what each one is. D is 100% roasted garlic b/c you only used a few cloves, and didn't smash them. C is 100% garlic b/c that stuff is incredibly potent. A and B are for sure garlic powder and garlic paste, but I've never used garlic paste, so I'm not sure how "garlicky" it is.

    Sorry man but I disagree. Use the freshest RAW garlic (not roasted); Crush at least a whole head and finely chop, rub all over the meat and let it marinate AT LEAST overnight. Nothing beats that in my opinion.

    You shouldn't have done the row garlic like that, you should slice the raw garlic in thin sheets and then after the seasoning put them on top covering the whole steak. That's the most garlicky flavor u can get maybe too much, cuz when u roasted it u killed the favor of "raw garlic", so that was to me an unfair comparison. Btw great job on ur videos, just this one I didn't like as much.

    i do it the way my grandma used to, with real fresh minced garlic....nothing beats the real deal

    garlic powder is more an American thing and its nowhere near as real garlic tempers the meat really nicely
