      That much salt will kill ANYTHING.

      triden121 if you choose a high quality piece of fish and enough salt, there shouldn't be any parasites, but with any raw meat or fish there is always a risk of parasites

      Salt and sugar cured salmon IS the very definition of gravlax, Teddles.. Her technique of oiling it does not take away that it is gravlax.

    adding half a gallon of vegetable oil does not make it Gravlax. Main part of cured salmon is salt. Everything else is personal preference

      1954viking part of cooking is making it your own. I have not tried with the oil but I will. I personally use lemon zest and dill , but this is her recipe. Good for her

      +powder77777 The salt/sugar combo "cooks" the Salmon by drawing out almost all of the moisture and replacing it with some salt/sugar. Salt also kills bacteria as does preserving in oil. It is no more salty than canned tuna :)

      It's raw and not salty, fish needs to be very fresh, it'll absorb as much salt as it needs, the rest you'll wash off
