Japanese Robatayaki Should Be an Olympic Sport | Food Skills

  • In this edition of "Food Skills," we head to NYC's Robataya, where chef Yu-Jin Tsugehara gives us a master class in the art of Japanese robatayaki. Popularized in the Sendai region of Japan, the traditional cooking method features seasonal skewers grilled over a special charcoal called bincho-tan. The chefs command a central hearth, and are surrounded by a bed of fresh seafood and vegetables. At Robataya, the preparation is as memorable as the meal.

    Everything is ala cart. Except the Chef Okamase where they pick a full course pairing for you. Its going to be $50-$80 without sake. So $100 per person. Plus cost of travel Which is expensive in NYC.

    Meh, wasn't really impressed. The dishes were simple and the chef was't under any stress cooking for just the camera. Film again under normal conditions during business hours and lets see if the dishes look as good. Also, add some on camera food reviews talking about what makes this style of grilling different than what anyone else could do in their backyard with a simple charcoal or gas grill.

      while i agree with every thing you said, i have to point out that japanese flavor comes from extreme simplicity, i wouldnt be surprised if those veggies and shrimp only had 1-3 ingredients.
      its all about proportions, cooking execution and the way things are cut, its definitely not something you cant achieve at home by any means. they are just precise, its not french cuisine.

    I love this channel so consider this constructive. These short fucking videos give me culinary blue-balls. Interview someone from the operation. Too much? Film someone or a small group experiencing the dish or process. I mean you guys are hauling equipment and people out to these things anyway. give me some content I can sink my teeth into.
